Ingredients

Chicken

  • 1.5 lbs boneless skinless chicken breast
  • Salt and pepper, to taste
  • 1/2 cup arrowroot flour, potato starch, or cassava flour

Cooking Fat

  • 1/4 cup ghee
  • 2 tbsp ghee (if needed)

Sauce

  • 1 tbsp arrowroot flour, potato starch, or cassava flour
  • 2 tsp minced garlic (about four cloves)
  • 1/2 cup finely chopped yellow or sweet onion (about half a medium onion)
  • 3 tbsp fresh lemon juice (about one large lemon)
  • 3/4 cup chicken broth or bone broth
  • 1/4 cup capers (drained)
  • Flat-leaf parsley for garnish (optional)

Instructions

  1. Cut the chicken: Slice the chicken breasts horizontally and then vertically to create cutlets. Pat them dry thoroughly to ensure the flour coating sticks well.
  2. Season and flour: Season both sides of the chicken cutlets with salt and pepper. Toss them in 1/2 cup of arrowroot flour (or the chosen flour) until fully coated.
  3. Heat the skillet and cook chicken: Warm a large skillet over medium-high heat and add 1/4 cup ghee. Once melted and hot, add the coated chicken cutlets and cook each side for about 4-5 minutes until golden brown and crispy.
  4. Remove chicken: Transfer the cooked chicken to a plate to set aside.
  5. Prepare sauce base: Lower heat to medium. If the skillet is dry, add the remaining 2 tablespoons of ghee. Sauté the chopped onion for 3-4 minutes until softened. Add the minced garlic and cook until it begins to lightly brown, releasing aromatic flavors.
  6. Thicken and add liquids: Whisk the remaining 1 tablespoon of flour into the chicken broth to avoid lumps. Pour this mixture into the pan along with the fresh lemon juice and capers. Stir and bring to a gentle simmer.
  7. Combine chicken and sauce: Return the cooked chicken cutlets to the pan, coating them in the lemon-caper sauce. Simmer together for 3-4 minutes to meld the flavors and ensure the chicken is heated through.
  8. Finish and serve: Remove the skillet from heat, garnish with chopped flat-leaf parsley if desired, and serve immediately. Enjoy this bright, comforting Whole30 Chicken Piccata!

Notes

  • Patting the chicken dry before coating with flour helps achieve a crispy crust.
  • If you don’t have ghee, clarified butter or a high smoke point oil can be substituted.
  • Use arrowroot flour or cassava flour for a Whole30-approved and gluten-free coating.
  • The sauce can be adjusted in acidity by adding more or less lemon juice to taste.
  • Capers add a salty tang; rinse if you prefer them less intense.
  • Serve this dish with steamed vegetables or a side of cauliflower rice to keep it Whole30 compliant.
