Ingredients

Produce

  • 2 ounce Arugula
  • 1 Mini Cucumber
  • 4 ounce Grape Tomatoes
  • 2 Scallions

Pantry

  • 1 unit Red Pepper Jam
  • 4 teaspoon Dijon Mustard
  • 1 unit Microwavable Grain Blend (approx. 1 cup cooked)
  • 5 teaspoon Sherry Vinegar
  • ½ teaspoon Salt
  • 2 tablespoon Olive Oil
  • ½ teaspoon Black Pepper

Nuts

  • 1 ounce Cashews

Instructions

  1. Prepare Produce: Wash and dry all produce thoroughly to ensure freshness and cleanliness. Trim and thinly slice the scallions. Trim the mini cucumber, cut lengthwise into quarters, then slice thinly into quarter-moon shapes. Halve the grape tomatoes to enhance their flavor and ease of eating.
  2. Make Dressing and Toss Veggies: In a large bowl, whisk together the sherry vinegar, Dijon mustard, red pepper jam, olive oil, salt, and black pepper until fully combined to create a tangy and slightly sweet dressing. Add the prepared scallions, cucumber slices, and halved grape tomatoes to the bowl and toss gently until all the vegetables are evenly coated with the dressing.
  3. Warm Grain Blend: Massage the microwavable grain blend package to loosen the grains inside, then partially open the top to vent. Microwave the grains for 1½ to 2 minutes until warmed through. Carefully transfer the warmed grains to the bowl with the dressed vegetables and toss until well combined.
  4. Finish Salad: Add the arugula and cashews to the bowl and toss gently once more until the arugula is evenly distributed and the cashews are mixed throughout. Taste the bowl and adjust seasoning with additional salt and pepper as desired.
  5. Serve: Divide the salad evenly between two serving bowls and enjoy immediately while the grains are warm and the vegetables remain fresh.

Notes

  • For extra protein, consider adding cooked chickpeas or tofu.
  • Use different nuts like almonds or walnuts if preferred.
  • Microwavable grain blend can be substituted with cooked quinoa, brown rice, or farro.
  • Adjust the amount of red pepper jam to control the sweetness and spiciness of the dressing.
  • This recipe is best served immediately after preparation to maintain the freshness of the arugula.
