A quick and nutritious Veggie Quinoa Stir Fry combining fluffy quinoa, colorful mixed vegetables, and scrambled eggs, all tossed in a flavorful soy-ginger-sriracha sauce. Perfect for a healthy and satisfying meal in just 20 minutes.

Ingredients

Sauce

  • 3 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 2 teaspoons sriracha
  • 2 teaspoons freshly grated ginger

Main Ingredients

  • 1 cup cooked quinoa, cooled
  • 2 eggs
  • 4 teaspoons vegetable oil, divided
  • 4 green onions, diced (white and green parts separated)
  • 4 cups frozen mixed vegetables
  • 1 teaspoon sesame seeds (optional)

Instructions

  1. Prepare Sauce: In a small bowl, whisk together the soy sauce, rice vinegar, sriracha, and freshly grated ginger until well combined. This will be the flavorful sauce that ties the dish together.
  2. Mix Egg with Sauce: In a separate bowl, whisk the eggs together with 1 tablespoon of the prepared soy sauce mixture to add flavor to the eggs before cooking.
  3. Scramble Eggs: Heat 2 teaspoons of vegetable oil in a large non-stick skillet over high heat for about 30 seconds. Add the egg mixture and cook for 1-2 minutes, stirring gently with a spatula to scramble. Once cooked, remove the scrambled eggs from the skillet and set aside.
  4. Sauté Vegetables: In the same skillet, add the remaining 2 teaspoons of vegetable oil. Add the frozen mixed vegetables and the white parts of the diced green onions. Cook for 3-4 minutes over high heat until the vegetables become tender. If needed, extend cooking time until vegetables are fully cooked.
  5. Add Quinoa and Sauce: Once the vegetables are tender, add the cooled cooked quinoa and the remaining soy sauce mixture to the skillet. Stir well to combine all ingredients and cook for another 2-4 minutes to heat through and allow flavors to meld.
  6. Combine Eggs and Greens: Return the scrambled eggs to the skillet along with the green parts of the diced green onions. Stir everything together and cook for an additional minute until the eggs are reheated and the scallions are slightly softened.
  7. Garnish and Serve: Remove from heat and sprinkle with sesame seeds for a nutty finish, if desired. Serve warm as a wholesome main dish.

Notes

  • Use fresh ginger for the best flavor; ground ginger will alter the taste.
  • Frozen mixed vegetables can include carrots, peas, corn, and green beans for a balanced mix.
  • Adjust sriracha quantity to your preferred spice level.
  • You can substitute vegetable oil with sesame oil for a more pronounced nutty flavor.
  • For a vegan version, omit eggs or substitute with tofu scramble.
  • Make sure quinoa is cooked and cooled before starting for best texture.
