Ingredients

Salad Ingredients

  • 1 (15-ounce) can chickpeas, drained and rinsed
  • ¼ cup celery, finely diced
  • 3 tablespoons red onion, finely chopped
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh dill, chopped

Dressing Ingredients

  • 3 tablespoons mayonnaise or Greek yogurt (vegan mayo for vegan option)
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • ½ teaspoon garlic powder
  • ½ teaspoon salt (or to taste)
  • ¼ teaspoon black pepper

Sandwich Assembly

  • 6–8 slices bread (sourdough, whole grain, or sandwich bread)
  • Lettuce (or mixed greens or sprouts)
  • Avocado slices (optional)

Instructions

  1. Mash the Chickpeas: Place the drained chickpeas into a medium mixing bowl. Use a fork or potato masher to mash them until they are mostly broken down but still slightly chunky to keep a nice texture in the salad.
  2. Add Vegetables and Herbs: Stir in the finely diced celery, chopped red onion, fresh parsley, and dill until evenly combined with the mashed chickpeas.
  3. Make the Dressing: In a small bowl, whisk together the mayonnaise (or Greek yogurt), lemon juice, Dijon mustard, garlic powder, salt, and black pepper until the dressing is smooth and well mixed.
  4. Combine Dressing and Salad: Pour the dressing over the chickpea mixture and stir thoroughly until all ingredients are coated. Taste and adjust seasoning by adding more salt, pepper, or lemon juice as needed.
  5. Assemble the Sandwiches: Spread a generous portion of the chickpea salad onto a slice of your chosen bread. Top with lettuce or mixed greens and optional avocado slices. Place another slice of bread on top and serve immediately.

Notes

  • For a vegan option, be sure to use vegan mayonnaise instead of regular mayo or Greek yogurt.
  • Feel free to add other crunchy vegetables like diced bell peppers or shredded carrots for extra flavor and texture.
  • This salad can be stored in an airtight container in the refrigerator for up to 2 days.
  • Use fresh herbs when possible for the best flavor, but dried herbs can be substituted in a pinch.
  • Toast the bread for added texture and warmth if desired.
