This Vegan Broccoli Casserole is a delicious, creamy, and comforting plant-based dish perfect for any occasion. Featuring tender blanched broccoli topped with a rich cashew-based sauce and golden breadcrumbs, it’s a nutritious and satisfying meal that’s easy to prepare and bake to perfection.

Ingredients

Vegetables

  • 6 cups broccoli florets

Sauce

  • 1 cup cashews (soaked for 2 hours)
  • 1 cup plant-based milk
  • 1/4 cup nutritional yeast
  • 2 tbsp lemon juice
  • 1 tsp garlic powder
  • 1 tsp onion flakes (or onion powder)
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Topping

  • 1 cup breadcrumbs

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to ensure it's ready to bake the casserole.
  2. Blanch Broccoli: Cook the broccoli florets in boiling water for a few minutes until they're tender but still crisp. Drain well and place the blanched broccoli in a 9x13-inch baking dish evenly.
  3. Prepare Sauce: In a blender, combine the soaked cashews, plant-based milk, nutritional yeast, lemon juice, garlic powder, onion flakes, salt, and black pepper. Blend until the mixture is completely smooth and creamy.
  4. Combine Sauce and Broccoli: Pour the cashew sauce over the broccoli in the baking dish and gently toss or stir to ensure all florets are well coated with the creamy sauce.
  5. Add Breadcrumb Topping: Sprinkle the cup of breadcrumbs evenly over the top of the broccoli and sauce mixture to create a crispy topping once baked.
  6. Bake: Place the baking dish in the preheated oven and bake for 25 to 30 minutes, or until the breadcrumb topping is golden brown and the casserole is bubbling around the edges.
  7. Cool and Serve: Remove the casserole from the oven and let it cool for about 5 minutes before serving to allow the sauce to set slightly.
