This comforting Tomato Basil Soup recipe features roasted roma tomatoes blended with fresh basil and aromatic vegetables, creating a rich and flavorful soup perfect for any season.
Sea salt and freshly ground black pepper, to taste
Sautéed Vegetables and Soup Base
¼ cup extra-virgin olive oil (divided)
1 medium yellow onion, chopped
⅓ cup chopped carrots
4 garlic cloves, chopped
3 cups vegetable broth
1 tablespoon balsamic vinegar
1 teaspoon fresh thyme leaves
1 loosely packed cup fresh basil leaves, plus more for garnish
Instructions
Roast the Tomatoes: Preheat the oven to 350°F (175°C) and line a large baking sheet with parchment paper. Arrange the tomato halves cut side up on the baking sheet. Drizzle with 2 tablespoons of olive oil and season with sea salt and freshly ground black pepper. Roast in the oven for 1 hour, or until the tomatoes' edges begin to shrivel but the insides remain juicy.
Sauté Aromatics: Heat the remaining 2 tablespoons of olive oil in a large pot over medium heat. Add the chopped onions, carrots, garlic, and ½ teaspoon of salt. Cook for about 8 minutes, stirring occasionally, until the vegetables are softened and fragrant.
Simmer the Soup: Stir in the roasted tomatoes along with their juices, vegetable broth, balsamic vinegar, and fresh thyme leaves. Bring the mixture to a simmer and cook gently for 20 minutes to allow the flavors to meld.
Blend the Soup: Allow the soup to cool slightly, then carefully transfer it in batches to a blender. Blend until completely smooth and creamy. Return the blended soup to the pot.
Add Basil and Season: Stir in the fresh basil leaves and pulse a few times in the blender (if using) or stir in by hand to combine the herb evenly without over-blending. Taste and adjust seasoning with salt and pepper as needed.
Serve: Ladle the hot soup into bowls and garnish with additional fresh basil leaves. Serve warm and enjoy.
Notes
Roasting the tomatoes concentrates their sweetness and adds depth to the soup's flavor.
Use a sturdy blender or an immersion blender for smooth soup texture; work in batches for safety.
Fresh basil adds bright herbaceous notes—adding it at the end preserves its vibrant flavor.
For a richer soup, swirl in a spoonful of cream or coconut milk before serving.
Store leftovers in the refrigerator for up to 3 days or freeze for up to 2 months.
