Ingredients

Marinade and Meat

  • 2 sachets Sweet Asian Sauce
  • 1 unit Ginger (peeled and grated)
  • 1 unit Garlic (peeled and grated)
  • 1 sachet Soy Sauce
  • 1 tsp Sugar
  • Juice of 1 lime wedge
  • 250 grams 21-day Aged Irish Beef Strips

Vegetables and Nuts

  • 1 unit Bell Pepper (halved, deseeded, and sliced into thin strips)
  • 20 grams Peanuts (for garnish)
  • Remaining lime wedges (for serving)

Others

  • 300 grams Udon Noodles
  • Oil (for frying, as needed)
  • Salt (to taste)
  • Pepper (to taste)
  • Water (for boiling noodles)

Instructions

  1. Prepare Marinade and Marinate Beef: Peel and grate the garlic and ginger. Quarter the lime and squeeze juice from one wedge. In a bowl, combine the sweet Asian sauce, soy sauce, grated ginger and garlic, lime juice, and sugar. Add the beef strips to this marinade and set aside to allow the flavors to infuse. Ensure to wash your hands and any equipment after handling raw meat.
  2. Cook Bell Pepper: Halve the bell pepper, remove the core and seeds, and slice it into thin strips. Heat a large pan over high heat with a drizzle of oil. When the oil is hot, add the bell pepper and stir-fry for 6-8 minutes until just softened but still crisp.
  3. Cook Udon Noodles: Meanwhile, bring a pot of water to a boil. Add the udon noodles and cook for 1-2 minutes until warmed through. Drain the noodles in a sieve and return them to the pot off the heat. Drizzle a little oil and toss gently to prevent sticking.
  4. Stir-fry Beef with Peppers: Add the marinated beef along with its marinade to the pan with the peppers. Stir-fry for 1-2 minutes until the beef is browned on the outside and cooked through.
  5. Combine and Serve: Remove the pan from heat and add the drained noodles to the beef and peppers. Toss everything together to coat evenly with the sauce. Taste and season with salt and pepper as needed. Divide the stir-fry between bowls and sprinkle peanuts over the top. Serve with remaining lime wedges for squeezing over.

Notes

  • Ensure beef is cooked until browned on the outside for food safety.
  • If short on time, boil water in a kettle to speed up noodle cooking.
  • Peeling ginger is easiest using the edge of a teaspoon.
  • Leftover lime wedges add fresh zest when served alongside.
  • Oil is used for stir-frying; use neutral-flavored oil like vegetable or canola.
