Ingredients

Vegetables and Beans

  • 3 Roma tomatoes, seeds removed and diced
  • 2 ripe avocados, diced
  • 1 (15 oz) can black beans, rinsed and drained
  • 1 (15 oz) can black-eyed peas, rinsed and drained
  • 1 ½ cups frozen sweet corn, thawed
  • 1 bell pepper, diced (half green, half red, or any color)
  • ⅓ cup red onion, diced
  • 1 jalapeno pepper, seeds removed and diced finely
  • ⅓ cup cilantro, finely chopped

Dressing

  • ⅓ cup olive oil
  • 2 tablespoons red wine vinegar
  • 2 tablespoons lime juice, fresh-squeezed preferred
  • 1 teaspoon sugar
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon garlic powder

To Serve

  • Tortilla chips

Instructions

  1. Combine the main ingredients. In a large bowl, mix together the diced Roma tomatoes, diced avocado, diced red onion, black beans, black-eyed peas, thawed corn, diced bell pepper, finely chopped jalapeno, and cilantro. Stir well to evenly distribute all ingredients.
  2. Prepare the dressing. In a separate bowl, whisk together the olive oil, fresh lime juice, red wine vinegar, sugar, salt, black pepper, and garlic powder until emulsified and smooth.
  3. Mix dressing with salad. Pour the dressing over the mixed ingredients in the large bowl. Toss thoroughly to ensure all components are coated evenly with the flavorful dressing.
  4. Refrigerate and serve. Cover the bowl and refrigerate for at least one hour to allow the flavors to marinate and meld. Before serving, give the mixture a good stir and serve chilled with crunchy tortilla chips on the side.

Notes

  • For best flavor, refrigerate the Texas Caviar for at least one hour before serving to allow the dressing to permeate the beans and vegetables.
  • Adjust the jalapeno quantity to control the heat level, or omit seeds for milder flavor.
  • This dish can be made a day ahead and stored covered in the refrigerator.
  • Use fresh lime juice for the best citrus flavor in the dressing.
  • Serve as a dip with tortilla chips or as a side salad for barbecues and gatherings.
