Ingredients

Sauce Ingredients

  • 1/2 cup (125 ml) mayonnaise
  • 1/2 cup (125 ml) sour cream
  • 3 tbsp (45 ml) pickled jalapeño juice (from the pickled jalapeños)
  • 3 tbsp (15 g) pickled jalapeños (minced)
  • 1 clove garlic (or 1 tsp garlic powder)
  • 2 tsp cumin
  • 2 tsp smoked paprika
  • 1/2 tsp cayenne powder
  • Salt and pepper (to taste)

Quesadilla Ingredients

  • 8 medium flour tortillas
  • 4 cups (800 g) shredded rotisserie chicken
  • 4 cups (460 g) shredded cheese blend (Monterey Jack, American Cheese, and Mozzarella recommended)

Instructions

  1. Make the jalapeño sauce: In a small bowl, combine the mayonnaise, sour cream, pickled jalapeño juice, minced pickled jalapeños, garlic, cumin, smoked paprika, cayenne powder, salt, and pepper. Whisk together until fully blended. Taste and adjust seasonings as desired to balance the heat and creaminess.
  2. Prepare the chicken: If using rotisserie or leftover chicken, shred it using two forks or your hands until finely pulled apart. Transfer the shredded chicken to a medium bowl. Add part or all of the jalapeño sauce and stir until the chicken is coated and creamy. Reserve any extra sauce for dipping.
  3. Assemble the quesadillas: Heat a skillet over medium heat. Place one tortilla in the skillet, then layer cheese evenly over the tortilla, followed by the creamy chicken mixture, and then another layer of cheese. Top with a second tortilla.
  4. Cook the quesadilla: Cook the assembled quesadilla until the bottom tortilla is golden brown and the cheese starts to melt, about 1 minute. Carefully flip the quesadilla and cook the other side until golden brown and the cheese is fully melted, about 30 to 60 seconds. Repeat this process with the remaining tortillas and filling.
  5. Serve: Remove the quesadillas from the skillet and slice each into wedges if desired. Serve immediately with extra jalapeño sauce for dipping and enjoy the melty, spicy flavors.

Notes

  • You can use leftover rotisserie chicken for convenience or cook your own chicken breasts or thighs, then shred them for this recipe.
  • Adjust the amount of jalapeños and cayenne powder according to your preferred spice level.
  • Serve with salsa, guacamole, or sour cream for added flavor.
  • Cheese blend of Monterey Jack, American Cheese, and Mozzarella makes for perfect melty texture and flavor combination.
