A refreshing and vibrant Sugar Snap Pea Mojito Mocktail that combines the natural sweetness of sugar snap peas with zesty lime and fresh mint, perfect for a light, alcohol-free beverage that’s both flavorful and visually appealing.

Ingredients

Simple Syrup

  • ¾ cup water
  • ¾ cup granulated sugar

Sugar Snap Pea Puree

  • 10 oz sugar snap peas
  • ½ cup fresh lime juice

Mocktail Assembly

  • A large bundle of fresh mint (for blending and muddling)
  • 3 tablespoons sugar snap pea syrup (from the puree mixture)
  • 6 mint leaves (for muddling per serving)
  • 1½ cups sparkling water (plus ¼ cup per glass to top off)
  • Ice (as needed)

Instructions

  1. Make simple syrup: Heat ¾ cup water and ¾ cup granulated sugar in a small pot over medium heat until the sugar completely dissolves and the mixture just begins to bubble at the edges. Remove from heat and transfer the syrup to a jar. Chill thoroughly before use. For faster cooling, place the syrup in a wide bowl in the freezer.
  2. Blanch sugar snap peas: Bring a large pot of water to a rolling boil. Prepare a medium bowl filled with ice water nearby for an ice bath. Once boiling, add the 10 oz sugar snap peas and blanch them for 1.5 to 2 minutes. Immediately transfer the peas using a fine mesh sieve to the ice bath to stop the cooking and cool completely.
  3. Prepare sugar snap pea syrup: Add the blanched, cooled sugar snap peas to a high-powered blender along with the chilled simple syrup and ½ cup fresh lime juice. Blend until completely smooth. Press the mixture through a fine mesh sieve to strain out solids and collect a smooth syrup. Chill the syrup until ready to serve.
  4. Assemble the mocktail: For each serving, muddle 6 mint leaves with 1 tablespoon of the sugar snap pea syrup in a glass to release the flavors. Add the remaining 2 tablespoons of sugar snap pea syrup to the glass. Fill the glass with ice and top off with ¼ cup sparkling water. Stir gently and garnish with a mint sprig if desired. Serve immediately.

Notes

  • Blanching the peas preserves their vibrant green color and fresh flavor while softening them for smooth blending.
  • The pea syrup can be made ahead and stored in the refrigerator for up to 3 days.
  • Adjust the sparkling water quantity to taste if you prefer a lighter or stronger flavor.
  • Use fresh lime juice for the best citrus brightness and authenticity.
  • This mocktail is naturally vegan and dairy-free.
