Ingredients
Eggs
6 large eggs
Filling
1/4 cup mayonnaise
1 teaspoon mustard
1 teaspoon white vinegar
1/8 teaspoon salt
1/8 teaspoon black ground pepper
1/8 teaspoon red pepper powder (optional, for spiciness)
Toppings (optional)
Smoked paprika (to sprinkle on top)
Finely chopped herbs such as chives, dill, or parsley (to sprinkle on top)
Instructions
Boil the eggs: Place eggs in a medium saucepan and cover with water so there is 1-2 inches of water above them. Bring to a boil over high heat, then remove from heat, cover, and let sit for 14 minutes. Afterward, run the eggs under cold water for 1 minute to cool.
Peel and prepare eggs: Carefully peel the cooled eggs and slice them lengthwise. Remove the yolks and place them into a medium mixing bowl. Set the egg whites aside for filling.
Make the filling: Mash the egg yolks with a fork until crumbly. Add mayonnaise, white vinegar, mustard, salt, black pepper, and the optional red pepper powder if you want a spicy kick. Mix well until the mixture is smooth and creamy.
Fill the egg whites: Transfer the yolk mixture into a piping bag fitted with a large star tip and pipe into the egg whites using a circular motion, starting at the edges and ending in the center to fill them completely. Alternatively, use a spoon to fill the egg whites.
Add toppings and serve: Sprinkle smoked paprika and/or chopped herbs over the filled eggs for extra flavor and presentation. Serve immediately or refrigerate until ready to serve.
Notes
Boiling eggs for 14 minutes ensures firm yolks that are easy to mash.
Running the eggs under cold water after boiling stops the cooking process and makes peeling easier.
Adjust the amount of mayonnaise and mustard to taste for creaminess and tang.
Red pepper powder is optional for a spicy variation.
Deviled eggs can be made ahead and chilled for up to 24 hours.
Use fresh herbs like chives, dill, or parsley to add fresh flavor and a nice appearance.
Piping the filling creates an elegant look, but a spoon works well too.
