A vibrant and spicy chili crisp coleslaw featuring a zesty dressing with rice vinegar, chili crisp, and fresh ginger paired with crunchy napa and red cabbage, shredded carrots, edamame, and fresh herbs. Perfect as a flavorful side dish or a unique salad with an Asian-inspired twist.

Ingredients

Dressing

  • 1 ½ tablespoons rice vinegar
  • 1 tablespoon canola oil
  • 1 tablespoon soy sauce
  • ½ tablespoon sugar
  • 1 clove garlic, minced
  • 1 tablespoon grated ginger
  • 1 tablespoon chili crisp

Salad

  • ½ cup shelled edamame
  • 2 cups shredded napa cabbage
  • 1 cup shredded red cabbage
  • 1 cup shredded carrots
  • 2 scallions, thinly sliced
  • ¼ cup minced cilantro

Optional Garnish

  • Sesame seeds

Instructions

  1. Prepare the dressing: In a small bowl or jar, combine rice vinegar, canola oil, soy sauce, sugar, minced garlic, grated ginger, and chili crisp. Whisk or shake vigorously until the mixture is well blended and set aside.
  2. Cook the edamame: Bring a small pot of water to a boil. Add the shelled edamame and boil for 6-8 minutes until they become tender. Drain thoroughly and transfer to a large mixing bowl.
  3. Combine vegetables: Add shredded napa cabbage, shredded red cabbage, shredded carrots, thinly sliced scallions, and minced cilantro to the bowl with the cooked edamame.
  4. Toss with dressing: Pour the prepared dressing over the vegetable mixture. Toss thoroughly to ensure all ingredients are evenly coated with the spicy, tangy dressing.
  5. Season and serve: Taste the coleslaw and add salt if desired to enhance the flavors. Serve immediately or chilled, garnished with sesame seeds for an extra touch of texture and flavor.

Notes

  • For a nuttier flavor, toast the sesame seeds lightly before garnishing.
  • Adjust chili crisp quantity to control the spice level based on preference.
  • Can be prepared a few hours in advance and chilled to allow flavors to meld better.
  • Edamame can be substituted with cooked green peas or chickpeas for variety.
