A delicious and easy-to-make Chicken Quesadilla recipe featuring a creamy, spicy chicken and cheese filling baked to golden perfection. Perfect for a quick weeknight dinner or a satisfying snack served with classic Mexican sides like salsa, guacamole, and sour cream.

Ingredients

For the Filling

  • 1 1/2 tablespoons oil
  • 1 1/2 tablespoons all-purpose flour
  • 3/4 cup chicken stock
  • 1-2 tablespoons hot sauce (Valentina or Cholula)
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon chili powder
  • Salt and pepper, to taste
  • 2 cups cooked chicken, shredded
  • 3 cups fresh shredded cheese (cheddar or Monterey Jack)

For the Quesadillas & Serving

  • 4 (8-inch) flour tortillas
  • Salsa, for serving
  • Guacamole or sliced avocado, for serving
  • Sour cream, for serving

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking and make cleanup easier.
  2. Prepare Cheese: Shred your choice of cheese (cheddar or Monterey Jack) and set it aside for easy access during filling preparation.
  3. Make Filling: Heat oil in a skillet over medium heat. Whisk in the flour and cook for about 30 seconds, stirring constantly to avoid lumps. Gradually whisk in the chicken stock and cook for 1-2 minutes, stirring frequently until the mixture thickens. Remove from heat and stir in ground cumin, chili powder, hot sauce, salt, pepper, cooked shredded chicken, and shredded cheese until well combined.
  4. Assemble and Bake: Spoon an even amount of the filling over half of each flour tortilla. Fold the tortillas in half to enclose the filling and place them on the prepared baking sheet. Bake in the preheated oven for 8-10 minutes or until the tortillas are golden brown and the cheese is melted and bubbly.
  5. Serve: Remove quesadillas from the oven, slice them into wedges, and serve warm with sour cream, salsa, and guacamole or sliced avocado for dipping and added flavor.

Notes

  • You can adjust the heat level by varying the amount of hot sauce used in the filling.
  • For crispier quesadillas, you can lightly brush the tortillas with oil before baking.
  • Leftover quesadillas can be reheated in a skillet or oven to retain crispness.
  • Substitute the chicken stock with vegetable stock to make it lighter or for dietary preferences.
  • Use whole wheat tortillas for a healthier alternative.
