Ingredients

  • 10 ounce Ground Beef
  • 1 unit Onion (half grated, half diced)
  • 1 tablespoon Shawarma Spice Blend (divided)
  • 1 unit Chicken Stock Concentrate (divided)
  • ¾ teaspoon Salt (for beef mixture)
  • Black Pepper to taste
  • 4 unit Wooden Skewers
  • 2 teaspoon Cooking Oil

Rice

  • ½ cup Basmati Rice
  • ¾ cup Water (for rice cooking)
  • ½ unit Chicken Stock Concentrate (half of one)
  • ½ teaspoon Shawarma Spice Blend
  • Pinch salt

Tomato Cucumber Salad

  • 1 unit Tomato, finely diced
  • 1 unit Mini Cucumber, trimmed and finely diced
  • Juice from 1 lemon wedge
  • Drizzle of Olive Oil
  • Pinch salt and pepper

Lemony Hummus

  • 4 tablespoon Hummus
  • 1 tablespoon Olive Oil
  • Pinch salt and pepper
  • Squeeze of Lemon Juice to taste
  • Water, 1 tsp at a time to thin as needed

Other

  • 1 unit Lemon, quartered
  • 1 tablespoon Butter (for toasting pitas and room temperature for spreading)
  • 2 unit Whole Wheat Pitas
  • 1 teaspoon Olive Oil (for cooking rice)

Instructions

  1. Prepare Skewers and Rice: Preheat the broiler to high. Soak four wooden skewers in water to prevent burning. Halve the onion, peel and dice half, and grate the other half. In a small pot, heat a drizzle of olive oil over medium-high heat and cook the diced onion with a pinch of salt until lightly browned and softened, about 3-4 minutes. Add basmati rice, water, half the chicken stock concentrate, and half the shawarma spice blend. Bring to a boil, then cover and simmer on low until rice is tender, 15-18 minutes. Keep covered off heat until serving.
  2. Prep Produce and Butter: Bring butter to room temperature for spreading and toast. Rinse and dry produce. Finely dice the tomato and cucumber. Quarter the lemon.
  3. Season and Form Beef Skewers: In a medium bowl, combine ground beef, grated onion, remaining shawarma spice blend, remaining chicken stock concentrate, ¾ teaspoon salt, and pepper. Divide the mixture into four equal portions and form each into a thin log. Press each beef log around a soaked skewer, sealing the meat and leaving a 2-3 inch uncovered handle.
  4. Broil Beef Skewers: Place the skewers on a lightly oiled baking sheet and broil until cooked through, about 5-6 minutes. Keep a close eye to avoid burning. Ground beef should reach an internal temperature of 160ºF to ensure doneness.
  5. Make Tomato Cucumber Salad and Lemony Hummus: In a bowl, combine diced tomato, cucumber, lemon juice from one wedge, a drizzle of olive oil, and salt and pepper to taste. In another bowl, whisk hummus with olive oil, salt, pepper, and lemon juice. Thin with water one teaspoon at a time until drizzling consistency is reached.
  6. Toast Pitas and Assemble Bowls: Toast the whole wheat pitas, then spread with softened butter and cut into four pieces each. Fluff the cooked rice with a fork and adjust seasoning with salt and pepper. Divide rice, beef skewers, tomato cucumber salad, and pitas evenly between bowls. Drizzle skewers with the lemony hummus. Serve with remaining lemon wedges on the side.

Notes

  • Soak wooden skewers in water to prevent burning during broiling.
  • Use fresh shawarma spice blend for authentic flavor.
  • Ensure ground beef is cooked to an internal temperature of 160ºF for safety.
  • Adjust lemon juice in hummus to your preferred tartness.
  • Can be served with additional fresh herbs like parsley or mint for garnish.
