A delicious Snickerdoodle Cobbler combining soft, cinnamon-sugar spiced cookie dough with sweet apple pie filling and a caramel drizzle, baked to golden perfection. This comforting dessert offers the classic warm flavors of snickerdoodles and apple pie in one easy-to-make cobbler.

Ingredients

Cookie Dough

  • 1 package snickerdoodle cookie mix (including mix and cinnamon sugar packet)
  • ½ cup butter
  • 1 egg

Filling and Topping

  • 1 can apple pie filling
  • 3 tablespoons caramel topping

Instructions

  1. Preheat and Prepare Dough: Preheat your oven to 375°F (190°C). In a mixing bowl, combine the snickerdoodle cookie mix (excluding the cinnamon sugar packet), ½ cup butter, and 1 egg. Mix until the ingredients come together to form a cookie dough.
  2. Layer the Cobbler: Spray an 8 x 8-inch baking pan with cooking spray. Divide the cookie dough into two equal halves. Pinch off small chunks from one half and scatter them evenly across the bottom of the pan. Sprinkle half of the cinnamon sugar packet over the scattered dough pieces.
  3. Add the Filling: Spoon the entire can of apple pie filling over the cookie dough base, spreading it evenly.
  4. Top with Remaining Dough and Sugar: Take the remaining half of the cookie dough, pinch off small sections, and scatter them over the apple pie filling layer. Then sprinkle the remaining cinnamon sugar packet on top of the dough chunks.
  5. Drizzle with Caramel: Drizzle 3 tablespoons of caramel topping evenly over the top to add richness and sweetness.
  6. Bake the Cobbler: Place the baking pan in the preheated oven and bake for 30 to 35 minutes, or until the cobbler top is golden brown and a toothpick inserted into the center comes out with a few moist crumbs.

Notes

  • Use an 8 x 8-inch pan for best results to ensure even baking.
  • Make sure not to sprinkle too much cinnamon sugar to avoid overpowering the sweetness.
  • The cobbler is best served warm, optionally with a scoop of vanilla ice cream for extra indulgence.
  • You can substitute the apple pie filling with other fruit fillings like peach or cherry, adjusting baking time slightly as needed.
