Slow Cooker Honey Garlic Steak Bites are tender, flavorful beef pieces cooked low and slow in a sweet and savory honey garlic sauce. Perfect for an easy weeknight meal, this recipe combines seared stew beef with a rich sauce made from honey, soy sauce, garlic, ketchup, and oregano, then slow-cooked until melt-in-your-mouth tender. Garnished with sesame seeds and fresh herbs, these steak bites are great served over rice.

Ingredients

Beef and Oil

  • 1 tablespoon sesame oil
  • 2 pounds stew beef

Sauce

  • 4 cloves garlic, minced
  • ½ cup honey
  • ½ cup ketchup
  • ½ cup low sodium soy sauce
  • ½ teaspoon dried oregano

Thickening and Garnish

  • 1 tablespoon cornstarch (if needed)
  • Sesame seeds for garnish
  • Fresh parsley or scallions (optional)

Instructions

  1. Heat sesame oil and sear beef: In a large skillet over medium-high heat, add 1 tablespoon of sesame oil. Add the stew beef and cook just until browned on all sides to lock in flavor, but not thoroughly cooked.
  2. Transfer beef to slow cooker: Place the seared beef in the basin of a 6-quart slow cooker.
  3. Prepare sauce and combine: In a medium bowl, whisk together the minced garlic, honey, ketchup, low sodium soy sauce, and dried oregano. Pour this sauce over the meat in the slow cooker and stir to coat evenly.
  4. Slow cook until tender: Cover the slow cooker and cook on LOW for 4 hours, or until the beef is tender and cooked through.
  5. Adjust sauce consistency: If the sauce thickens too much before the beef is tender, stir in ½ cup of water. If the sauce is too thin before serving, mix 1 tablespoon cornstarch with ¼ cup water and stir into the sauce to thicken it.
  6. Garnish and serve: Sprinkle sesame seeds and optionally fresh parsley or scallions over the steak bites. Serve hot with rice or your choice of sides.

Notes

  • Do not fully cook the beef when searing; just brown it to lock in flavors.
  • Adjust the sauce's thickness by adding water or cornstarch slurry as needed.
  • Serving with rice complements the savory and sweet flavors well.
  • Using low sodium soy sauce helps control the salt levels in the dish.
  • Garnish with fresh herbs like parsley or scallions for added freshness.
