Tender sautéed shrimp are paired with crisp vegetables and creamy avocado, all wrapped in crunchy Boston lettuce and topped with a zesty peanut and sesame ginger dressing for a delicious Asian-inspired dish.

Ingredients

Main Ingredients

  • 1 head of Boston lettuce
  • 1 lb large shrimp (peeled and deveined)
  • 1/2 tsp sea salt (or to taste)
  • 1/8 tsp black pepper (or to taste)
  • 1/2 Tbsp olive oil
  • 1 avocado (sliced into strips)
  • 1/2 cucumber (sliced into strips)
  • 1 medium carrot (cut into matchsticks)
  • 1/2 small bunch of cilantro

Peanut Sauce

  • 1/2 cup Lowfat sesame ginger dressing (We use Newman's Own Brand)
  • 1 1/2 Tbsp creamy peanut butter (room temperature)

Instructions

  1. Prepare and Cook Shrimp: Rinse and pat dry the shrimp thoroughly. Season with sea salt and black pepper. Heat 1/2 tablespoon of olive oil in a large non-stick skillet over medium-high heat. Once hot, add shrimp and sauté for 2 minutes on each side until just cooked through. Remove shrimp and set aside on a plate.
  2. Prepare Vegetables: Cut the cucumber and carrot into thin matchsticks. Slice the avocado into strips. Halve the cilantro sprigs so they’re ready for garnish and assembly.
  3. Make Peanut Dressing: In a mason jar or airtight container, combine 1/2 cup of lowfat sesame ginger dressing with 1 1/2 tablespoons of creamy peanut butter. Shake or stir vigorously until the dressing is smooth and well blended.
  4. Assemble Lettuce Wraps: Arrange the Boston lettuce leaves on a platter. In each leaf, place several carrot and cucumber strips, avocado strips, 2 cooked shrimp, and a few sprigs of cilantro. Drizzle generously with the homemade peanut dipping sauce.

Notes

  • Use peeled and deveined shrimp for convenience and best texture.
  • To make this dish vegan, substitute shrimp with tofu or tempeh and use a vegan sesame ginger dressing.
  • If you prefer a spicier peanut sauce, add a dash of sriracha or chili flakes to the dressing before shaking.
  • Serve immediately for the freshest texture and best flavor.
  • Boston lettuce is preferred for its sturdy, cup-shaped leaves that hold fillings well.
