Ingredients

Dry Ingredients

  • 2 ½ cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 tablespoons baking powder (aluminum free)
  • ½ teaspoon salt

Wet Ingredients

  • 2 cups whole milk
  • 2 eggs (room temperature)
  • 4 tablespoons butter (melted)
  • 1 teaspoon vanilla extract

Toppings

  • Chocolate chips
  • Blueberries
  • Strawberries
  • Bananas

Other

  • Cooking spray (for greasing the pan)

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 425°F (220°C). Generously grease a 13x18-inch rimmed baking sheet with cooking spray to prevent sticking.
  2. Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until evenly combined.
  3. Combine Wet Ingredients: Make a well in the center of the dry ingredients. Slowly whisk in the whole milk, eggs, melted butter, and vanilla extract until just combined. It’s okay if there are some small lumps in the batter.
  4. Spread Batter on Pan: Pour the pancake batter evenly onto the prepared baking sheet. Use a spatula to spread it out smoothly to cover the entire surface.
  5. Add Toppings: Divide the pan into four quadrants and sprinkle chocolate chips on one, blueberries on another, sliced strawberries in the third section, and sliced bananas in the last quadrant.
  6. Bake: Place the sheet pan in the preheated oven and bake for 15-17 minutes, or until the pancakes are puffed up and golden brown on top.
  7. Serve: Remove from the oven, cut into 12 equal portions, and serve immediately. Optionally, drizzle with maple syrup for extra sweetness.

Notes

  • For best results, use room temperature eggs to ensure a smooth batter.
  • Aluminum-free baking powder helps avoid a metallic taste and promotes even rising.
  • You can swap the milk for any dairy or non-dairy alternative, but whole milk gives the best texture and flavor.
  • Feel free to customize toppings with your favorite fruits or add nuts for extra crunch.
  • Be careful not to overmix the batter to keep the pancakes fluffy.
  • Cut into square or rectangular pieces using a sharp knife or pizza cutter for neat slices.
