This Scalloped Corn Casserole is a creamy, comforting side dish perfect for holiday dinners or family gatherings. Featuring a mix of creamed and sweet corn, it’s enriched with eggs and heavy cream, then topped with a buttery crushed cracker crust that bakes to golden perfection.

Ingredients

Corn Mixture

  • 1 (15-ounce) can creamed corn
  • 2 (15-ounce) cans sweet corn, drained
  • ¾ cup coarsely crushed Ritz crackers (about 36 crackers total, divided)
  • ½ cup salted butter, melted (divided)
  • ⅓ cup heavy cream
  • 3 large eggs
  • 2 teaspoons sugar
  • 1 teaspoon granulated garlic
  • ½ teaspoon onion powder
  • 1 teaspoon paprika
  • ½ teaspoon sea salt
  • ¼ teaspoon freshly cracked black pepper

Instructions

  1. Preheat Oven and Prepare Dish: Preheat your oven to 350°F (175°C) and position the rack in the center. Grease a 1½-quart baking dish thoroughly with butter to prevent sticking and enhance flavor.
  2. Combine Corn Ingredients: In a large mixing bowl, add the creamed corn, drained sweet corn, half of the crushed Ritz crackers (½ cup), ¼ cup of the melted butter, heavy cream, and the eggs. Season the mixture with sugar, granulated garlic, onion powder, paprika, sea salt, and freshly cracked black pepper. Mix thoroughly until well combined.
  3. Pour Mixture Into Baking Dish: Pour the prepared corn mixture evenly into the greased baking dish, spreading it out to form a uniform layer.
  4. Prepare Cracker Topping: In a separate small bowl, combine the remaining ¼ cup crushed Ritz crackers with the remaining ¼ cup melted butter. Mix to coat all cracker pieces evenly with butter.
  5. Top the Casserole: Sprinkle the buttery cracker topping evenly over the corn mixture to create a crisp, flavorful crust once baked.
  6. Bake the Casserole: Place the dish in the oven and bake for 30 to 40 minutes, until the topping is slightly browned and the filling is bubbling hot. This ensures a creamy texture inside with a golden crust outside.
  7. Cool Before Serving: Remove from the oven and let the casserole cool for about 10 minutes. This resting time helps the casserole set for easier serving and enhances flavors.

Notes

  • You can substitute salted butter with unsalted butter plus a pinch of extra salt if preferred.
  • For a lighter version, use light cream or half-and-half instead of heavy cream.
  • Ensure the sweet corn is drained well to avoid a watery casserole.
  • Crushed cracker topping can be substituted with crushed breadcrumbs for a different texture.
  • Letting the casserole rest before serving helps it to slice neatly and improves flavor melding.
