These Savory Chickpea Flour Crepes are a delicious gluten-free and vegan alternative to traditional crepes. Made with simple ingredients like chickpea flour, fresh herbs, and spices, they are light, flavorful, and perfect for breakfast, lunch, or a light dinner. The crepes are cooked on a skillet until golden and crispy, ideal for filling with your favorite chutneys or sauces.

Ingredients

Dry Ingredients

  • 1 cup chickpea flour
  • Salt to taste
  • ¼ teaspoon dried chilli flakes
  • ¼ teaspoon ground turmeric

Fresh Ingredients

  • ¼ cup fresh cilantro, chopped
  • 1 onion, diced
  • ½-inch fresh ginger, grated
  • 2 garlic cloves, minced
  • 1 green chilli, chopped (optional)

Liquids

  • 1 ¼ cup water, or more as necessary to make a thin crepe-like batter
  • 2 teaspoons olive oil, for cooking

Instructions

  1. Combine Ingredients (Except Water & Oil): In a mixing bowl, combine the chickpea flour, chopped cilantro, diced onion, grated ginger, minced garlic, chopped green chilli (if using), salt, dried chilli flakes, and ground turmeric. Mix well to ensure even distribution of all ingredients.
  2. Add Water: Gradually add the water a little at a time to the dry mixture, whisking continuously to create a smooth and thin batter. If the batter feels too thick, add additional water 1 teaspoon at a time until the desired consistency is achieved, resembling that of traditional crepe batter.
  3. Heat Up Oil: Place a non-stick skillet over medium heat. Once heated, brush the bottom lightly with olive oil to prevent sticking and enhance browning.
  4. Spread Batter in Skillet: Using a ladle, pour approximately 1/4 cup of batter onto the hot skillet. Immediately, spread the batter gently in a circular motion with the back of the ladle to form a thin and even crepe.
  5. Cook Until Golden: Let the crepe cook undisturbed on medium-low heat for about 2 to 3 minutes until the edges lift easily and the bottom is golden brown. Carefully flip the crepe and cook the other side for 1 to 2 minutes until golden and cooked through. Repeat this process with the remaining batter, adding oil as necessary.
  6. Garnish & Serve: Serve the savory chickpea crepes hot. They pair wonderfully with ketchup, chutney, or your preferred filling for a wholesome meal.
