These Savory Breakfast Pop Tarts combine fluffy cheesy eggs, spicy beef sausage, and sweet caramelized onions inside a flaky puff pastry shell, topped with everything bagel seasoning for a delightful breakfast treat perfect for busy mornings or brunch gatherings.

Ingredients

Egg Mixture

  • 6 eggs
  • 1/2 tsp hot sauce (such as Frank's)
  • 2 pinches salt (divided)
  • 1 cup shredded cheddar cheese (divided, such as Tillamook)
  • 1 tbsp salted butter (divided)

Onion and beef Sausage Mixture

  • 1 small sweet onion, thinly sliced
  • 1 tsp balsamic reduction
  • 1/2 cup crumbled spicy beef sausage (cooked)
  • Pinch of salt

Pastry

  • 1 box puff pastry (2 sheets, defrosted)
  • Flour (for dusting)
  • 1 egg white (whisked)
  • Everything seed bagel seasoning

Instructions

  1. Preheat Oven: Preheat your oven to 400 degrees Fahrenheit to prepare for baking the pop tarts.
  2. Prepare Eggs: Crack 6 eggs into a small bowl and whisk for 30 seconds. Add 1/2 teaspoon hot sauce and 2 pinches of salt, then whisk again to combine flavors.
  3. Cook Eggs: Melt 1/2 tablespoon of salted butter in a nonstick pan over medium-low heat. Pour in the whisked eggs and cook slowly, stirring continuously until small curds begin to form.
  4. Add Cheese to Eggs: Stir in most of the shredded cheddar cheese, reserving just under a quarter cup, and cook a few more minutes until a semi-firm cheesy egg custard develops. Remove eggs from pan and set aside.
  5. Cook Onions and Sausage: In the same pan, add remaining 1/2 tablespoon butter. Sauté sliced onions with a pinch of salt over medium heat for about 10 minutes, stirring often until softened and caramelized. Stir in balsamic reduction for 1 minute until absorbed. Add cooked spicy sausage and heat for 1-2 minutes. Set mixture aside.
  6. Prepare Pastry Base: Lightly flour a clean work surface. Roll out one sheet of puff pastry and cut into 6 rectangles. Arrange them on a baking sheet lined with parchment paper.
  7. Fill Pastry: Evenly divide the cheesy eggs and sausage-onion mixture among the pastry rectangles. Brush the edges of each pastry rectangle with whisked egg white.
  8. Top Pastry: Roll out the second puff pastry sheet, cut into 6 rectangles, and carefully place over the filled tarts. Use a sharp knife to cut two small steam holes in each tart. Seal and crimp edges with the tines of a fork.
  9. Finish and Bake: Brush tops with egg white, sprinkle generously with everything bagel seasoning, and lightly dust with the remaining cheddar cheese. Bake for 20 minutes, rotating the pan halfway through, until golden brown and puffed.

Notes

  • Defrost puff pastry sheets completely before rolling out for best texture.
  • The amount of hot sauce can be adjusted to preference for spiciness.
  • Use a nonstick pan to prevent eggs and onions from sticking during cooking.
  • Be gentle when sealing the pop tarts to avoid leakage of fillings while baking.
  • These savory pop tarts are best enjoyed fresh out of the oven but can be reheated in a toaster oven.
