A classic Salisbury Steak recipe featuring tender hamburger patties seasoned with dry mustard and garlic powder, pan-fried to perfection, and smothered in a rich, savory onion gravy made from beef broth and Worcestershire sauce. This comforting dish is quick to prepare and perfect for a hearty family meal.

Ingredients

Hamburger Patties

  • 1 pound ground beef
  • 2 large eggs
  • 1 cup potato chips, smashed
  • 2 teaspoons dry mustard
  • 2 teaspoons garlic powder
  • Salt and pepper, to taste
  • 1 tablespoon unsalted butter
  • 1 tablespoon olive oil

Gravy

  • 1 yellow onion, thinly sliced
  • 2 cups beef broth, more if needed for thinning
  • 4 dashes Worcestershire sauce
  • 1 tablespoon cornstarch
  • Salt and pepper, to taste

Instructions

  1. Prepare the patties: In a large bowl, combine the ground beef, eggs, smashed potato chips, dry mustard, garlic powder, salt, and pepper. Mix thoroughly with your hands until the ingredients are fully incorporated. Form the mixture into four even hamburger patties.
  2. Cook the patties: Heat a 12-inch skillet over medium-high heat and add the butter and olive oil. Once the butter has melted, place the patties in the skillet and fry them for about 5 minutes on each side, or until they are no longer pink in the center and have a nice golden-brown crust. Remove the patties from the skillet and drain any excess grease from the pan.
  3. Prepare the gravy: Reduce the skillet's heat to medium and add the thinly sliced onions. Stir occasionally and cook until the onions are golden brown and softened, about 3 to 5 minutes.
  4. Make the gravy sauce: In a small bowl, mix the beef broth and cornstarch until smooth. Pour this mixture into the skillet with the onions, then add the Worcestershire sauce. Stir constantly as the sauce heats and begins to thicken. If the gravy becomes too thick, add more beef broth to achieve the desired consistency. Season with salt and pepper to taste.
  5. Combine and simmer: Return the cooked hamburger patties to the skillet with the gravy. Spoon the gravy over the patties and let them simmer together on low heat for a couple of minutes to warm through and meld flavors before serving.

Notes

  • Using potato chips as a binder adds a unique texture and flavor to the patties compared to traditional breadcrumbs.
  • Adjust the seasoning in the patties and gravy according to your taste preferences.
  • For a thicker gravy, add a bit more cornstarch dissolved in cold beef broth gradually while cooking.
  • Savor this dish with sides like mashed potatoes or steamed vegetables for a complete meal.
  • Make sure to use a sturdy skillet to properly brown the patties and cook the gravy evenly.
