A quick and easy recipe for crispy roasted green beans tossed with olive oil, garlic powder, and Parmesan cheese. Perfect as a healthy side dish, these green beans are baked until tender and slightly caramelized for maximum flavor.

Ingredients

Green Beans

  • 12 ounces green beans, trimmed and dry

Seasoning

  • 2 teaspoons olive oil
  • Kosher salt, to taste
  • Fresh cracked pepper, to taste
  • 1/4 teaspoon garlic powder

Topping

  • 1 1/2 tablespoons shredded Parmesan cheese (optional, omit for Whole30)

Instructions

  1. Preheat the oven: Preheat your oven to 425°F (220°C). Line a baking sheet with aluminum foil for easy cleanup.
  2. Prepare the green beans: Lay the trimmed and dry green beans evenly on the baking sheet. Drizzle with olive oil, then season with kosher salt, fresh cracked pepper, and garlic powder. Toss everything together to coat the green beans evenly.
  3. Arrange on baking sheet: Spread the green beans out in a single layer so they all lay flat, ensuring even roasting. Place the baking sheet on the lower third rack of your oven.
  4. Roast green beans: Bake the green beans for 10 minutes, then shake or toss the pan to turn them for even cooking. Continue baking for an additional 5 minutes until they are tender and slightly caramelized.
  5. Add Parmesan cheese: Remove the baking sheet from the oven and immediately sprinkle the shredded Parmesan cheese over the hot green beans. The residual heat will slightly melt the cheese, adding a delicious savory finish.

Notes

  • Ensure green beans are dry before roasting to achieve crispiness.
  • For a Whole30 compliant version, omit the Parmesan cheese.
  • Use fresh Parmesan cheese for the best flavor.
  • Adjust salt and pepper to your taste preferences.
  • Green beans can be roasted a few hours ahead and reheated quickly in the oven.
