This Roasted Greek Potatoes recipe features tender baby potatoes baked to perfection and topped with crumbled feta cheese, fragrant oregano, and sweet onion slices. A simple yet flavorful side dish inspired by traditional Greek flavors, perfect for a family meal or gathering.

Ingredients

Potatoes

  • 10-12 baby potatoes

Cheese

  • 150 grams feta cheese

Other Ingredients

  • Olive oil (to drizzle)
  • A few slices of onion
  • Dried oregano (to taste)
  • Kosher salt (to taste)
  • Ground pepper (to taste)

Instructions

  1. Clean the Potatoes: Rinse the baby potatoes thoroughly under running water to remove all dirt and impurities.
  2. Prepare the Feta Cheese: Crumble the feta cheese with your hands and place it in a bowl, set aside for later use.
  3. Boil the Potatoes: Fill a medium-sized pot with water and add a pinch of kosher salt. Bring to a boil, then add the potatoes and cook for 5-7 minutes until slightly tender but still firm.
  4. Preheat the Oven: Set your oven to 230°C (446°F) to get it ready for roasting the potatoes.
  5. Initial Baking: Transfer the boiled potatoes onto a large baking tray. Drizzle generously with olive oil, ensuring they are well-coated. Place the tray in the oven and bake for 12-15 minutes.
  6. Flip and Continue Baking: Remove the tray, flip the potatoes to the other side, and bake for another 10 minutes to achieve even roasting and crispiness.
  7. Slice and Smash the Potatoes: Take each potato and make a lengthwise cut, stopping before cutting all the way through. Then gently smash the potato with a spatula to open it up slightly and create more surface area for toppings.
  8. Season and Add Feta: Drizzle more olive oil over the smashed potatoes, season with kosher salt and ground pepper to taste. Stuff some of the crumbled feta cheese inside the sliced potatoes and scatter the remaining feta on top.
  9. Add Onions and Oregano: Distribute the onion slices evenly over the potatoes, then sprinkle dried oregano on top for an aromatic Greek flavor.
  10. Final Bake: Return the tray to the oven and bake for approximately 10 more minutes, or until the feta cheese has melted slightly and the onions have softened.
  11. Serve: Remove from oven and serve warm as a flavorful side dish.

Notes

  • Boiling the potatoes before baking ensures they cook evenly and become tender inside while crisping outside.
  • Use baby potatoes for this recipe as their size is perfect for quick roasting and smashing.
  • You can adjust the amount of oregano to your taste; fresh oregano can be used if available for a brighter flavor.
  • For a spicier twist, add crushed red pepper flakes before the final bake.
  • Serve with a side of tzatziki or Greek salad for a complete meal.
