Ingredients

Salad

  • 4 cups broccoli florets
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 small red onion, thinly sliced

Dressing

  • 1/4 cup tahini
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons lemon juice
  • 1 garlic clove, minced
  • 2 to 4 tablespoons water (to thin dressing)

Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper to prevent sticking and facilitate easy cleanup.
  2. Toss Vegetables and Chickpeas: In a large bowl, combine the broccoli florets and drained chickpeas. Add olive oil, salt, and black pepper, then toss everything thoroughly to ensure even coating.
  3. Arrange on Baking Sheet: Spread the broccoli and chickpea mixture evenly in a single layer on the prepared baking sheet, avoiding overcrowding to promote even roasting and crispiness.
  4. Roast: Place the baking sheet in the oven and roast for 25 to 30 minutes, flipping the mixture halfway through the cooking time to achieve an even tender texture on the broccoli and crispy chickpeas.
  5. Prepare Dressing: While roasting, blend together the tahini, lemon juice, minced garlic, grated Parmesan cheese, and 2 tablespoons water in a blender or food processor until smooth. Add additional water as needed to reach a creamy, pourable consistency.
  6. Combine Salad: Once roasting is complete, transfer the broccoli and chickpeas to a large serving bowl. Add the thinly sliced red onion and drizzle the tahini-Parmesan dressing over the top.
  7. Toss and Serve: Gently toss the salad to combine all ingredients evenly. Serve warm or at room temperature for the best flavor and texture.
