These Raspberry Oatmeal Bars combine a sweet and tangy raspberry sauce with a crunchy oat crumble topping. Perfect as a snack or dessert, they offer a delightful balance of flavors and textures with a buttery oat base and a luscious fruit filling. Made with simple ingredients and baked to golden perfection, these bars are both comforting and delicious.

Ingredients

Raspberry Sauce

  • 2 cups raspberries (fresh or frozen)
  • 1 teaspoon vanilla
  • ⅓ cup granulated sugar
  • 2 tablespoons cornstarch

Oatmeal Crust and Topping

  • 1 cup all-purpose flour
  • ¼ teaspoon salt
  • 1 cup old fashioned rolled oats
  • ⅓ cup granulated sugar
  • ¼ cup brown sugar (packed)
  • ½ cup butter (melted)

Instructions

  1. Make the Raspberry Sauce: In a saucepan over medium heat, combine raspberries, vanilla, granulated sugar, and cornstarch. Cook for 5 to 10 minutes, stirring occasionally, until the raspberries break down and the sauce thickens. If the sauce is too watery, add an additional teaspoon of cornstarch and cook until thickened.
  2. Prepare for Baking: Preheat the oven to 350°F (175°C). Line an 8x8-inch baking dish with parchment paper, allowing some overhang for easy removal of bars later. Set aside.
  3. Make the Oatmeal Crust and Topping: In a medium mixing bowl, combine the all-purpose flour, rolled oats, salt, granulated sugar, and brown sugar. Stir in the melted butter until the mixture resembles coarse crumbs.
  4. Assemble the Bars: Press half of the oatmeal crumble mixture evenly into the bottom of the prepared baking dish to create a firm crust. Pour the raspberry sauce over the crust and spread it evenly. Sprinkle the remaining oatmeal crumble mixture evenly over the raspberry layer.
  5. Bake: Place the baking dish in the preheated oven and bake for 27 to 30 minutes, or until the topping turns golden brown and the raspberry sauce is set.
  6. Cool and Serve: Remove the bars from the oven and allow them to cool completely in the baking dish before lifting out using the parchment paper overhang and cutting into 9 squares. This helps the bars set and hold together when sliced.

Notes

  • For a thicker raspberry sauce, do not hesitate to add an extra teaspoon of cornstarch.
  • Use parchment paper to line the baking dish for easy removal and cleaner slices.
  • These bars can be stored in an airtight container in the refrigerator for up to 5 days.
  • Feel free to substitute raspberries with other berries like blueberries or blackberries.
  • Use fresh or frozen raspberries as per availability; if frozen, thaw and drain excess liquid before cooking.
