These Pumpkin Scones are a delightful Starbucks copycat recipe blending warm fall spices and pumpkin flavors into tender, flaky scones topped with a sweet vanilla glaze and a spiced pumpkin drizzle. Perfect for breakfast or an afternoon treat, they offer a cozy and flavorful bite of autumn.

Ingredients

Scones:

  • 2 1/4 cups all-purpose flour (scoop and level to measure)
  • 2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 1/8 tsp ground cloves
  • 1/4 cup packed light-brown sugar
  • 3 Tbsp granulated sugar
  • 1/2 cup unsalted butter (cold and diced into 1/2-inch pieces)
  • 1/2 cup + 1 Tbsp canned pumpkin puree (chilled, don't chill in can)
  • 3 1/2 Tbsp buttermilk
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 Tbsp honey
  • 1 Tbsp half and half

Vanilla Glaze:

  • 1 cup powdered sugar
  • 2 Tbsp half and half (then more as needed)

Pumpkin Glaze:

  • 3/4 cup powdered sugar
  • 1 Tbsp pumpkin puree
  • 1/4 tsp ground cinnamon
  • 1/8 tsp ground nutmeg
  • 1/8 tsp ground ginger
  • 1 Tbsp half and half

Instructions

  1. Prepare the oven and dry ingredients. Preheat your oven to 425°F (220°C). In a food processor, pulse together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, ginger, cloves, brown sugar, and granulated sugar until evenly blended. If you don't have a food processor, whisk these dry ingredients in a large bowl.
  2. Cut in the butter. Add the cold diced butter to the dry mixture and pulse several times until the butter is incorporated and no large chunks remain. Without a processor, use a pastry cutter to cut the butter into the flour mixture until crumbly.
  3. Mix wet ingredients. In a separate bowl, whisk together the chilled pumpkin puree, buttermilk, egg, vanilla extract, and honey until smooth and combined.
  4. Combine wet and dry mixtures. Create a well in the center of the flour/butter mixture and pour in the wet ingredients. Stir with a wooden spoon until just combined, then knead gently in the bowl or on a floured surface several times to form a cohesive dough.
  5. Shape and cut the dough. Lightly flour a work surface and invert the dough onto it. Pat it into an even 8-inch round. Using a floured large knife, slice the round into 8 equal wedges, dusting the knife with flour as needed because the dough is sticky.
  6. Bake the scones. Place the scones onto a baking sheet lined with Silpat or parchment paper. Brush the tops with 1 tablespoon of half and half. Bake in the preheated oven for 13-15 minutes until golden brown and a toothpick inserted into the center comes out clean. Transfer to a wire rack and cool for 10 minutes before glazing.
  7. Prepare the vanilla glaze. In a bowl, whisk together 1 cup powdered sugar and 2 tablespoons half and half, adding more half and half if needed to reach a thick but spreadable consistency.
  8. Glaze the scones. Spread the vanilla glaze evenly over the tops of the cooled scones. Allow the glaze to set at room temperature.
  9. Prepare the pumpkin glaze. In the same bowl used for the vanilla glaze, mix together 3/4 cup powdered sugar, 1 tablespoon pumpkin puree, cinnamon, nutmeg, ginger, and 1 tablespoon half and half until smooth. Transfer to a small resealable bag, seal it, and cut a tiny corner off for piping.
  10. Drizzle the pumpkin glaze. Drizzle the pumpkin glaze over the glazed scones in decorative patterns. Let the icing set completely before serving. The scones are best enjoyed on the day they're made.

Notes

  • Using chilled butter and pumpkin puree helps achieve flaky, tender scones.
  • If you don’t have a food processor, the dough can be mixed and the butter cut in by hand or with a pastry cutter.
  • Dusting the knife with flour while cutting prevents sticking and helps make clean slices.
  • Do not overbake the scones to keep them moist and tender.
  • The glaze should be thick but not runny to coat properly.
  • For best texture and flavor, serve scones the same day they are prepared.
