Ingredients

Sloppy Joe Mixture

  • 1 tablespoon olive oil
  • 1 sweet onion, diced
  • 1 red bell pepper, diced
  • 2 garlic cloves, minced
  • 1 pound ground turkey (94% lean)
  • 1 pound lean ground beef
  • 2 tablespoons tomato paste
  • 1 tablespoon smoked paprika
  • ⅓ cup brown sugar
  • 2 tablespoons apple cider vinegar
  • 1 ½ tablespoons Worcestershire sauce
  • 15 ounces tomato sauce

Assembly

  • 1 slab of 12 dinner rolls/slider rolls
  • 6 to 8 slices provolone cheese
  • Pickles, for topping (optional)
  • Melted butter and sesame seeds for brushing (optional)

Instructions

  1. Prepare the Sloppy Joe Mixture: Heat a large pot over medium-low heat and add 1 tablespoon olive oil. Add diced onion, red bell pepper, and minced garlic with a pinch of salt and pepper. Cook until onions soften, about 5-6 minutes.
  2. Cook the Meat: Increase heat to medium and add ground turkey and ground beef. Season with additional salt and pepper. Stir and break apart the meat with a wooden spoon until browned thoroughly.
  3. Add Flavorings: Stir in tomato paste, smoked paprika, and brown sugar. Then mix in Worcestershire sauce and apple cider vinegar, followed by tomato sauce. Cover and simmer for 15-20 minutes, stirring frequently. Taste and adjust seasoning as needed.
  4. Preheat the Oven: While the meat simmers, preheat the oven to 350°F (175°C).
  5. Prepare the Rolls: Slice the slab of slider rolls horizontally, keeping the halves attached. Place the bottom half on a baking sheet.
  6. Assemble the Sliders: Layer provolone cheese evenly over the bottom rolls, then spoon a generous layer of the sloppy joe mixture on top. Add pickles if desired.
  7. Top and Optional Finish: Place the top half of the rolls over the filling. Optionally brush the top with melted butter and sprinkle with sesame seeds for extra flavor and texture.
  8. Bake: Bake the assembled sliders in the preheated oven for 10-12 minutes until the cheese is melted and the buns are golden and slightly toasted.
  9. Serve: Remove from oven and serve warm. Enjoy these pull apart sliders fresh. Leftover filling can be saved for future meals.

Notes

  • This recipe makes more sloppy joe mixture than needed for one slab of sliders; leftovers can be refrigerated or frozen for later use.
  • Adjust seasoning during simmering to balance sweetness and tanginess to your preference.
  • Optional brushing of buns with butter and sesame seeds adds richness and texture but can be omitted for a lighter option.
  • Pickles add a nice tangy crunch but are optional depending on taste.
  • Ensure the sliders are baked hot enough to melt the cheese thoroughly and lightly crisp the bread for best texture.
