Perfect for busy mornings, these pancakes are fluffy, protein-packed, and easy to customize with your favorite mix-ins such as blueberries or chocolate chips.

Ingredients

Main Ingredients

  • 2 eggs
  • 1/2 cup 2% or 5% Greek yogurt (plain or vanilla)
  • 2/3 cup almond milk or any plant milk
  • 2 Tbsp pure maple syrup
  • 1.5 tsp vanilla extract
  • 2 cups rolled oats
  • 2 tsp baking powder
  • 1/2 tsp cinnamon

Optional Mix-ins

  • Blueberries
  • Chocolate chips
  • Banana slices
  • Fresh fruit
  • Chia seeds

Instructions

  1. Blend Ingredients: Add eggs, Greek yogurt, almond milk, maple syrup, vanilla extract, rolled oats, baking powder, and cinnamon into a blender. Blend until the batter is smooth, about 20 to 40 seconds.
  2. Rest Batter: Let the batter sit for 8 minutes to thicken while heating the pan. You can transfer it to a mixing bowl or leave it in the blender container.
  3. Heat Pan: Preheat a large nonstick pan over medium-low heat. Lightly butter the pan or coat with non-stick spray to prevent sticking.
  4. Cook Pancakes: Pour about 1/4 to 1/3 cup of batter onto the hot pan. Add your chosen mix-ins immediately. Cook for 2 to 3 minutes until the edges firm up and bubbles form on top. Gently flip and cook the other side for about 1 minute until golden and cooked through.
  5. Serve: Serve the pancakes immediately topped with fresh fruit, additional maple syrup, nut butter, or honey as desired.
  6. Keep Warm (Optional): If preparing a large batch, preheat your oven to 200°F and keep cooked pancakes warm on a baking sheet while finishing the rest.

Notes

  • For fluffier pancakes, allow the batter to rest before cooking to let oats absorb the liquid.
  • Use non-stick spray or lightly butter the pan to avoid sticking without adding excess fat.
  • Mix-ins can be customized based on preference or dietary needs.
  • These pancakes freeze well; reheat gently in toaster or microwave for a quick breakfast.
  • To make it vegan, substitute eggs with flax or chia egg and use dairy-free yogurt.
