This Pineapple Cheese Ball is a delightful appetizer combining creamy cheeses with sweet pineapple, crunchy bell pepper, jalapeño heat, and toasted pecans. Perfectly chilled and coated with pecans, it’s a crowd-pleasing appetizer served with crackers for entertaining or casual gatherings.

Ingredients

Cheese Ball Mixture

  • 2 (8-oz.) pkg. cream cheese, softened
  • 1 (8-oz.) can crushed pineapple, drained and lightly patted dry
  • 1 (5.3-oz.) pkg. gournay cheese (such as Boursin Garlic and Fine Herbs), softened
  • 1/4 cup finely chopped red bell pepper (from 1 [6-oz.] bell pepper)
  • 1 tsp. finely chopped jalapeño chile (from 1 chile)
  • 1 tsp. garlic and herb seasoning
  • 1/2 tsp. kosher salt
  • 2 small scallions, finely chopped (about 1/3 cup)
  • 1 1/2 cups chopped pecans, toasted and divided

To Serve

  • Crackers

Instructions

  1. Mix cheese ball ingredients: In a medium bowl, stir together the softened cream cheese, drained crushed pineapple, softened gournay cheese, finely chopped red bell pepper, finely chopped jalapeño, garlic and herb seasoning, kosher salt, and chopped scallions until the cream cheese is thoroughly combined. Then, fold in 1/2 cup of the toasted pecans until evenly incorporated.
  2. Shape mixture into a ball: Form the cheese mixture into a large ball using your hands. Wrap it tightly in plastic wrap and refrigerate for about 1 hour until firm and chilled.
  3. Roll cheese ball in pecans: Place the remaining 1 cup of toasted pecans in a flat layer on a plate. Remove the chilled cheese ball from the plastic wrap and gently roll it in the pecans, pressing lightly to adhere them to the surface. Keep the cheese ball chilled until ready to serve.
  4. Serve: Present the pineapple cheese ball with your favorite crackers for spreading and enjoy as an appetizer or party snack.

Notes

  • Make sure to pat dry the crushed pineapple to prevent excess moisture from making the cheese ball too soft.
  • Toasting the pecans enhances their flavor and crunch—toast them in a dry skillet over medium heat for about 5 minutes, stirring frequently.
  • You can prepare the cheese ball a day ahead to allow flavors to meld and simply cover and chill until serving.
  • Substitute gournay cheese with Boursin or any similar soft herb-flavored cheese if needed.
  • Adjust jalapeño quantity to control the heat level according to your preference.
