Ingredients

Potatoes

  • 6 large Yukon Gold potatoes

Seasoning and Oil

  • 1/4 cup olive oil
  • 1 1/2 teaspoons paprika
  • 1 1/4 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder (adjust to taste)
  • 1/4 teaspoon pepper
  • 1 teaspoon salt, plus more to taste

Instructions

  1. Preheat Oven: Preheat your oven to 450°F (232°C). Line a rimmed baking sheet with parchment paper to prevent sticking; keep an eye on the parchment as the high heat can sometimes cause it to brown.
  2. Prepare Potatoes: Peel the Yukon Gold potatoes and dice them into bite-sized pieces. Place the diced potatoes in a large bowl and set aside.
  3. Mix Seasoning: In a smaller bowl, combine the olive oil with paprika, garlic powder, onion powder, cumin, chili powder, pepper, and salt. Stir well to create the seasoning mixture.
  4. Coat Potatoes: Pour the seasoned olive oil mixture over the diced potatoes. Toss thoroughly to ensure every piece is evenly coated with the flavorful mixture.
  5. Arrange on Baking Sheet: Spread the coated potatoes in a single layer on the prepared baking sheet to allow for even roasting and crisping.
  6. Roast Potatoes: Place the baking sheet in the oven and roast at 450°F for 35 to 45 minutes, stirring every 10 minutes to promote even cooking and browning.
  7. Check Doneness and Serve: Once the potatoes are tender on the inside and crispy on the outside, remove them from the oven. Taste and add more salt if desired before serving.

Notes

  • Using Yukon Gold potatoes provides a nice balance of creaminess and crispiness.
  • Adjust chili powder to control the spice level according to your preference.
  • Stirring every 10 minutes ensures even cooking and prevents the potatoes from sticking.
  • For extra crispness, you can preheat the baking sheet before spreading the potatoes.
  • Serve hot as a delicious side dish with your favorite main course.
