This easy and wholesome 1 Bowl Baked Oatmeal is a comforting breakfast classic that combines wholesome rolled oats with fresh or frozen berries, a hint of cinnamon, and pure maple syrup for natural sweetness. Baked to soft perfection, it’s a nutritious and filling morning meal that requires minimal prep and cleanup, perfect for busy weekdays or relaxing weekends.

Ingredients

Wet Ingredients

  • 1 and 3/4 cups (420ml) milk (dairy or nondairy)
  • 2 large eggs
  • 1/2 cup (120ml) pure maple syrup
  • 1/4 cup (4 Tbsp; 56g) unsalted butter, melted and slightly cooled
  • 1/4 cup (60g) unsweetened applesauce or mashed banana
  • 1 teaspoon pure vanilla extract

Dry Ingredients

  • 3 cups (255g) old-fashioned whole rolled oats
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Add-ins

  • 1 and 1/2 cups (225g) fresh or frozen mixed berries (do not thaw)
  • Optional for topping: 1/2 cup chopped walnuts or pecans

Instructions

  1. Prepare Oven and Pan: Adjust the oven rack to the lower third position and preheat the oven to 350°F (177°C). Lightly grease a 9×9 inch square pan or an 11×7 inch rectangle pan with nonstick spray. Ensure the pan holds around 3 quarts; smaller pans like 8×8 inch may be too small. A white casserole dish as pictured works well.
  2. Mix Ingredients: In one large mixing bowl, whisk together all wet and dry ingredients until fully combined. Gently fold in the fresh or frozen mixed berries, or reserve berries for topping. Stir in optional nuts if desired, or sprinkle them on top after pouring the mixture into the pan.
  3. Bake: Pour the oatmeal mixture into the prepared pan and spread evenly. Bake in the oven for about 35 minutes, or until the center is almost set and the oatmeal is soft and tender. For a firmer, drier baked oatmeal, continue baking until the center has completely set.
  4. Cool and Serve: Allow the baked oatmeal to cool for about 5 minutes before slicing. Serve warm, optionally with yogurt or additional toppings of choice. Store leftovers covered in the refrigerator for up to one week.

Notes

  • This recipe can be scaled up and baked in a 9×13 inch pan; adjust baking time accordingly as the thickness may vary.
  • Use either fresh or frozen berries but do not thaw frozen berries before adding to the mixture to prevent excess moisture.
  • For a vegan version, substitute eggs with flax eggs and use dairy-free milk and butter substitutes.
  • Adding chopped nuts on top rather than inside keeps them crunchy after baking.
  • Leftovers store well and can be reheated in the microwave or oven.
