Olivier Salad, also known as Russian Potato Salad, is a hearty and creamy dish featuring diced potatoes, carrots, hard-boiled eggs, dill pickles, cucumbers, smoked kielbasa, and sweet peas all combined with mayonnaise. This classic salad is perfect for gatherings and can be prepared ahead of time, allowing the flavors to meld beautifully in the refrigerator.

Ingredients

Vegetables and Protein

  • 5-6 medium russet potatoes, cooked, peeled, and diced
  • 2-3 carrots, cooked, peeled, and diced
  • 16 hard boiled eggs, diced
  • 1½ cups finely diced dill pickles
  • 3 cups finely diced English cucumber
  • 1 (15 oz) can sweet peas, drained
  • 3½ cups diced smoked kielbasa

Dressings and Seasonings

  • 3 cups mayonnaise (adjust according to preference)
  • Salt and pepper, to taste
  • Optional: chopped green onions or dill

Instructions

  1. Cook the Ingredients: Boil the potatoes, carrots, and eggs until fully cooked. This usually takes around 15-20 minutes for potatoes and carrots, and 10 minutes for hard-boiled eggs. Allow them to cool completely to room temperature before proceeding.
  2. Dice the Vegetables and Eggs: Once cooled, peel the potatoes, carrots, and eggs, then dice them into uniform pieces. Also dice the dill pickles, English cucumber, and smoked kielbasa to prepare for mixing.
  3. Combine Ingredients: In a large bowl, gently mix together the diced potatoes, carrots, eggs, dill pickles, cucumbers, sweet peas, and smoked kielbasa until evenly distributed.
  4. Add Mayonnaise and Season: Stir in the mayonnaise gradually, mixing thoroughly to coat all ingredients. Season with salt and pepper to taste, and add optional chopped green onions or fresh dill for extra flavor if desired.
  5. Chill before Serving: Cover the bowl and refrigerate the salad for 4-6 hours to allow the flavors to meld and the dish to chill completely. Serve cold and enjoy!

Notes

  • Start with less mayonnaise and add more to achieve your desired creaminess.
  • For a smoky flavor, use smoked kielbasa, but you can substitute with cooked ham or bologna if preferred.
  • This salad keeps well for up to 2 days refrigerated.
  • Optional fresh herbs like dill or green onions brighten the flavor.
  • Ensure potatoes and carrots are fully cooled before mixing to prevent the mayonnaise from breaking down.
