Ingredients

Nutella Discs

  • 10 - 14 tbsp Nutella

Pancakes

  • 1 1/2 cups plain flour
  • 3 tsp baking powder
  • 4 tbsp sugar
  • Pinch of salt
  • 1 egg
  • 1 cup + 2 tbsp low fat milk
  • 1 tsp vanilla essence (optional)
  • 1 tsp butter (separated as 2 x 1/2 tsp)
  • Sliced strawberries (optional, for serving)

Instructions

  1. Prepare Nutella Discs: Line a baking tray with parchment paper. Dollop 1 1/2 to 2 tbsp of Nutella onto the tray and spread into discs about 2 1/2 inches (6 cm) in diameter and 1/5 inch (1/2 cm) thick. Repeat to make 7 discs. Freeze for 1 to 1 1/2 hours until firm. Keep discs frozen until ready to use as they soften quickly.
  2. Make Pancake Batter: In a bowl, whisk together the dry ingredients: plain flour, baking powder, sugar, and salt. Make a well in the center and add the wet ingredients: egg, milk, and vanilla essence. Whisk gently until smooth and lump-free, but avoid overmixing to keep the batter light.
  3. Prepare Pan: Melt 1/2 tsp butter in a non-stick frying pan over medium heat. Once melted, wipe most of the butter off with a paper towel to grease the pan lightly without excess fat.
  4. Cook Pancakes with Nutella: Remove 3 frozen Nutella discs from the freezer just before cooking. Pour about 1/4 cup of batter into the pan, quickly place one Nutella disc in the middle, and cover it with more batter to enclose the filling completely. Cook on medium heat until bubbles appear around the edges (about 2 minutes), then check the underside for a golden color. Flip carefully and cook the other side until golden and cooked through.
  5. Repeat Cooking: Continue cooking the remaining pancakes with the remaining batter and Nutella discs. Re-melt butter in the pan after the 3rd or 4th pancake, if needed. You should get around 6 to 7 pancakes depending on batter thickness.
  6. Serve: Serve the Nutella stuffed pancakes warm with sliced strawberries if desired. Optionally, add cream for extra indulgence, although it's not necessary.

Notes

  • Spread Nutella discs evenly to ensure easy freezing and consistent size for stuffing the pancakes.
  • Using low fat milk in the batter keeps the pancakes light without compromising flavor.
  • Wiping excess butter from the pan prevents greasy pancakes while still keeping them from sticking.
  • Work quickly when assembling pancakes to prevent Nutella discs from melting before cooking.
  • Serve immediately to enjoy the warm, melted Nutella center at its best.
