These No Bake Lemon Blueberry Energy Bites are a perfect paleo and gluten-free breakfast or snack option. Made with wholesome ingredients like cashew nut butter, fresh blueberries, and lemon zest, these energy bites are naturally sweetened with maple syrup and held together with coconut flour and coconut oil. Ready in just 10 minutes, they’re a refreshing, nutritious, and energizing treat that requires no baking—just blend, roll, and chill!

Ingredients

Wet Ingredients

  • 3/4 cups cashew nut butter
  • 1/4 cup maple syrup
  • 1/4 cup coconut oil (melted)
  • 1 lemon (juice & zest, divided)

Dry Ingredients

  • 1/2 cup + 2 tbsp coconut flour

Add-ins

  • 1/2 cup fresh blueberries

Instructions

  1. Combine Wet Ingredients: Put cashew nut butter, maple syrup, and melted coconut oil into a food processor and blend until well incorporated into a smooth mixture.
  2. Add Dry Ingredients: Add the coconut flour and the juice of the lemon into the food processor, then pulse until the mixture forms a sticky ball.
  3. Incorporate Zest & Blueberries: Add the lemon zest and fresh blueberries, then pulse just a few times to gently combine without crushing the berries.
  4. Shape the Bites: Using a cookie scoop, place the dough onto a parchment-lined baking sheet and roll each portion into a ball using the palm of your hand.
  5. Chill to Firm: Place the rolled bites in the refrigerator and let them chill until firm, about 30 minutes to 1 hour.
  6. Storage: Store the energy bites in an airtight container in the fridge for up to one week.

Notes

  • Ensure coconut oil is melted but not hot to avoid melting the mixture during blending.
  • Pulse the blueberries lightly to keep some texture and avoid turning the mixture purple.
  • These energy bites can be frozen for up to 3 months; thaw in fridge before eating.
  • Use raw cashew butter for a cleaner paleo-friendly option.
  • Adjust sweetness by adding more or less maple syrup according to taste.
