Ingredients

Cookie Dough

  • 4 tbsp softened unsalted butter
  • 4 tbsp dark brown sugar, packed
  • 3 tbsp granulated sugar
  • 1 large egg yolk
  • ½ tsp vanilla extract
  • ½ cup all-purpose flour, pre-sifted
  • ¼ cup unsweetened cocoa powder
  • ¼ tsp baking soda
  • ⅛ tsp kosher salt

Toppings

  • Pistachio cream (about ½ tsp per cookie, see notes)
  • Big candy eyes (one per cookie for Halloween theme)

Instructions

  1. Preheat the Air Fryer: Set your Air Fryer to 325°F (163°C). If available, use the 'bake' function instead of the standard Air Fryer setting. Preheat for 10 minutes to ensure even cooking.
  2. Prepare the Cookie Dough: In a mixing bowl, combine softened unsalted butter, dark brown sugar, and granulated sugar. Use a hand mixer to beat until creamy and well incorporated. Add the egg yolk and vanilla extract, then continue mixing until the mixture is smooth and emulsified.
  3. Add Dry Ingredients: Incorporate half of the pre-sifted all-purpose flour, baking soda, and kosher salt into the mixture. Using a sieve, gently tap the unsweetened cocoa powder over the bowl to avoid lumps. Add the rest of the flour and mix gently until just combined to avoid overworking the dough.
  4. Shape the Cookies: Scoop out 1 tablespoon of the cookie dough, pack and level it, then roll into a ball. Place each ball on a parchment-lined Air Fryer tray, leaving at least 2 inches of space between cookies. Using the thick end of a wooden chopstick, create a shallow well or indentation in the center of each dough ball.
  5. Air Fry Baking: Insert the tray into the middle of the Air Fryer's cooking chamber, positioning it near the rotisserie catch. If your Air Fryer uses a basket, line the crisper plate with parchment paper before placing the balls. Air fry the cookies for 8 to 10 minutes until the edges are crisp and set, while the centers remain soft.
  6. Cool and Fill: Using the tip of a clean chopstick, gently press the center indentation of each cookie again to restore the hollow after baking. Allow the cookies to cool on the tray for about 10 minutes.
  7. Add Toppings and Serve: Fill each cookie's center well with about ½ teaspoon of pistachio cream. For a fun Halloween touch, place one big candy eye on top of the pistachio cream on each cookie. Serve and enjoy immediately or store for later.

Notes

  • Pistachio cream can be homemade by blending pistachios with a little sugar and oil or store-bought for convenience.
  • Ensure ample space between cookies while air frying, as they will spread slightly.
  • If you do not have an Air Fryer, you can bake these in a conventional oven at 325°F (163°C) for 10-12 minutes.
  • Use parchment paper for easy cleanup and to prevent sticking in the Air Fryer.
  • These cookies are best enjoyed the same day but can be stored in an airtight container for up to 3 days.
