Delicious and easy-to-make McGriddle Bites combine fluffy pancakes with savory breakfast sausage and melty cheddar cheese, all baked into bite-sized mini muffins perfect for a quick breakfast or snack.

Ingredients

Dry Ingredients

  • 2 cups Hungry Jack Pancake Mix

Wet Ingredients

  • 1 1/2 cups water
  • 1/4 cup maple syrup

Other Ingredients

  • 1 lb breakfast sausage
  • 1 cup shredded cheddar cheese

Instructions

  1. Brown Sausage: In a skillet over medium-high heat, brown the breakfast sausage thoroughly, breaking it into small pieces as it cooks. Once cooked, drain the grease very well to avoid excess fat, then set the cooked sausage aside.
  2. Prepare Pancake Batter: In a mixing bowl, combine the Hungry Jack pancake mix with 1 1/2 cups water according to the package directions, stirring until smooth. Then fold in the cooked sausage, shredded cheddar cheese, and 1/4 cup maple syrup, blending everything evenly.
  3. Fill Mini Muffin Pan: Grease a mini muffin pan well to prevent sticking. Pour the batter mixture evenly into the muffin cups, filling each about 3/4 full for proper rising.
  4. Bake: Preheat your oven to 400°F (204°C). Place the filled mini muffin pan in the oven and bake for 12 to 15 minutes, or until the tops are golden brown and a toothpick inserted comes out clean.
  5. Serve: Remove the McGriddle Bites from the oven and allow them to cool slightly before removing from the pan. Serve warm, optionally dipping in additional maple syrup for extra sweetness and enjoy!

Notes

  • Make sure to drain the sausage grease thoroughly to keep the bites from being greasy.
  • The recipe yields about 48 mini bites, perfect for sharing or freezing for later.
  • If preferred, substitute the breakfast sausage with a vegetarian or turkey sausage for a different flavor and diet preference.
  • Use a sharp cheddar for a stronger cheese flavor. Mild cheese can also be used if you prefer a subtler taste.
  • Store leftover bites in an airtight container in the refrigerator for up to 3 days, or freeze for up to 1 month.
