Perfect for a hearty family dinner, this meatloaf offers a cheesy surprise in every slice.

Ingredients

Meatloaf Mixture

  • 1 ¼ lb. lean ground beef
  • 1 cup Italian seasoned breadcrumbs
  • 2 large eggs
  • ½ cup finely diced onion
  • 2 tsp garlic powder
  • 2 tsp dried parsley
  • 1 tsp salt
  • 1 tsp black pepper
  • ½ cup honey BBQ sauce

Stuffing

  • 1 cup Bob Evans Macaroni and Cheese
  • 1 cup shredded mozzarella cheese

Topping

  • 1/3 cup ketchup
  • 2 tbsp brown sugar
  • 1 ½ tbsp yellow mustard

Instructions

  1. Prepare Oven and Baking Sheet: Preheat your oven to 350 degrees Fahrenheit. Line a baking sheet with tinfoil and lightly spray it with non-stick spray to prevent sticking, then set aside.
  2. Mix Meatloaf Ingredients: In a large bowl, combine the lean ground beef, Italian seasoned breadcrumbs, eggs, finely diced onion, garlic powder, dried parsley, salt, black pepper, and honey BBQ sauce. Knead together until all ingredients are fully incorporated and the mixture is uniform.
  3. Shape Meatloaf Base: Take half of the meat mixture and shape it into an approximately 8”x4” loaf on the prepared baking sheet. Gently press down the center to create a small cavity, making sure the sides of the loaf remain about 1 inch thick to hold the stuffing.
  4. Prepare and Add Stuffing: In a separate bowl, mix the Bob Evans Macaroni and Cheese with the shredded mozzarella cheese until evenly combined. Spoon this mixture into the cavity created in the meatloaf base.
  5. Enclose the Stuffing: Use the remaining meat mixture to cover the macaroni and cheese, sealing the edges by pinching the meatloaf sides together so the cheesy filling is completely enclosed.
  6. Bake Initial Meatloaf: Place the meatloaf in the oven and bake at 350 degrees F for 40 minutes, allowing it to cook through slowly.
  7. Prepare Topping and Increase Oven Heat: While the meatloaf bakes, combine the ketchup, brown sugar, and yellow mustard in a small dish. After the 40 minutes of baking, remove the meatloaf and increase the oven temperature to 400 degrees Fahrenheit. Brush or pour the topping evenly over the surface of the meatloaf.
  8. Bake with Topping: Return the meatloaf to the oven and bake for an additional 10 to 15 minutes. This final bake will cook the meatloaf thoroughly and caramelize the topping until bubbly and slightly crisp.
  9. Rest and Serve: Remove the meatloaf from the oven and let it stand for 5 to 10 minutes to allow juices to redistribute. Slice and serve warm, enjoying the cheesy macaroni surprise inside.

Notes

  • Make sure to fully enclose the macaroni and cheese filling to prevent it from leaking during baking.
  • You can substitute Bob Evans Macaroni and Cheese with any creamy prepared macaroni and cheese of your choice.
  • If preferred, the topping can be adjusted by adding a bit of smoked paprika or chili powder for a smoky or spicy kick.
  • Letting the meatloaf rest after baking helps keep it moist and makes slicing easier.
