Ingredients

Main Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 (1.25-oz) package taco seasoning
  • 1 (16-oz) jar salsa
  • 1 (12-oz) bag corn chips
  • 1 (15-oz) can black beans, drained and rinsed
  • 1 (8.5-oz) can corn, drained
  • 1 small can sliced black olives, drained
  • 1.5 cups shredded Mexican cheese blend

Toppings

  • 1 Roma tomato, diced
  • 1 small red onion, diced
  • 1 jalapeno, thinly sliced
  • 1 handful fresh cilantro
  • Sour cream, for serving

Instructions

  1. Prep: Heat the oven to 400°F. Line a baking sheet with aluminum foil and spray it generously with nonstick cooking spray to prevent sticking and make cleanup easy.
  2. Brown beef: Heat olive oil in a large skillet over medium-high heat. Add the ground beef and cook it until completely browned, breaking it up as it cooks. Drain excess fat if desired for a leaner dish. Stir in the taco seasoning and salsa, mixing well to combine and heat through.
  3. Assemble: Arrange the corn chips in a single layer on the prepared baking sheet to ensure even coverage. Spread the seasoned ground beef mixture evenly over the chips. Next, sprinkle on the black beans, corn, sliced olives, and shredded Mexican cheese blend.
  4. Bake: Place the baking sheet in the preheated oven and bake for about 5 to 6 minutes or until the cheese is fully melted and everything is heated through.
  5. Add toppings and serve: Remove from oven and immediately top with diced Roma tomato, red onion, thinly sliced jalapeño, and fresh cilantro. Serve warm with sour cream on the side for dipping or dolloping.

Notes

  • For extra heat, add more jalapenos or a dash of hot sauce.
  • To make this dish vegetarian, substitute the ground beef with sautéed mushrooms or a plant-based meat alternative and ensure the taco seasoning is vegetarian-friendly.
  • Use reduced-fat cheese and lean ground beef to reduce fat content.
  • Serve with guacamole or fresh salsa for added flavor.
  • Make sure to layer chips in a single layer to avoid soggy nachos and ensure even melting of cheese.
