These delicious leftover turkey patties transform shredded turkey meat into flavorful, tender patties seasoned with fresh herbs, garlic, and a touch of Dijon mustard. Lightly fried to a golden brown, they're a perfect quick meal using leftovers, offering a moist and satisfying texture with a crispy exterior.

Ingredients

Main Ingredients

  • 2 cups turkey meat (cooked, shredded; 10 ounces)
  • 1/2 cup superfine almond flour (can substitute plain breadcrumbs, gluten-free if needed)
  • 1/4 cup sour cream (or plain, whole milk Greek yogurt)
  • 1 tablespoon Dijon mustard
  • 1 large egg
  • 1 teaspoon Diamond Crystal kosher salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh garlic (minced)
  • 1/2 onion (chopped)
  • 1/2 cup parsley (finely chopped)
  • 4 tablespoons olive oil (for frying)

Instructions

  1. Prepare the Mixture: Add the turkey, almond flour, sour cream, Dijon mustard, egg, kosher salt, black pepper, garlic, and chopped onion into a food processor bowl.
  2. Process Ingredients: Pulse the mixture until finely chopped and fully incorporated, stopping once to scrape down the sides with a spatula. If the mixture feels very dry, add an extra egg and process again to combine evenly.
  3. Fold in Parsley: Transfer the mixture to a large bowl and gently fold in the finely chopped parsley. Avoid adding parsley to the food processor to keep the patties' appealing color.
  4. Heat the Oil: Heat olive oil in a double-burner griddle over medium heat, or alternatively use a 12-inch skillet in two batches for cooking.
  5. Form the Patties: Using a 1/4 cup ice cream scoop or measuring cup, measure out portions of the mixture and place them on the heated griddle or skillet. Flatten the patties with a spatula to even thickness.
  6. Cook the Patties: Cook each patty for about 3 minutes on one side until golden brown, then flip and cook the other side for another 3 minutes to achieve an even browning and a cooked-through interior.
  7. Serve: Remove from heat and serve the patties immediately while hot for the best flavor and texture.

Notes

  • If the mixture is too dry, adding an extra egg helps bind the patties better.
  • Using superfine almond flour keeps the patties moist; breadcrumbs can be a substitute for a different texture.
  • Folding in parsley last preserves the attractive color of the patties.
  • Using a griddle allows cooking multiple patties at once for faster preparation.
  • Serve the patties with your choice of dipping sauces or alongside salad for a balanced meal.
