Ingredients

Watermelon Layers

  • 7-10 pound seedless watermelon

Whipped Cream

  • 2 1/2 cups heavy whipping cream or non-dairy whipping cream
  • 1/2 cup confectioners’ sugar
  • 1 teaspoon vanilla bean paste or vanilla extract

Fruit Decorations

  • 2 1/2 cups fresh blueberries (firm-ripe, about 18 ounces)
  • 1 cup assorted fresh berries (for decorating)
  • Fresh mint sprigs (for garnish)

Instructions

  1. Prepare the Watermelon: Trim away the rounded ends of the watermelon, reserving the trimmed pieces. Cut the center portion into three thick slices. Using a 6×2-inch round pastry ring, cut circles from the center of each slice. Trim each round to approximately 2 inches thick. Pat the slices dry with paper towels, then refrigerate wrapped in paper towels for 30 minutes to remove excess moisture.
  2. Scoop Watermelon Balls: Use a melon baller to scoop balls from the reserved trimmed watermelon pieces. Refrigerate until ready to use for decorating.
  3. Wash and Dry Berries: Rinse all berries under cold water and pat very dry. Set aside.
  4. Make Whipped Cream: In a large mixing bowl, beat the heavy cream on high speed until it starts to thicken. Add confectioners’ sugar and vanilla; continue beating until stiff peaks form. Transfer half of the whipped cream to a piping bag fitted with a large closed-star tip.
  5. Assemble the First Layer: Place one watermelon round on a serving plate or cake stand. Spread a thin layer of whipped cream over the top, leaving about 3/4 inch around the edge uncovered. Arrange a single layer of blueberries over the whipped cream. Spread another thin layer of whipped cream over the berries so tops show through. Pipe whipped cream stars around the uncovered edge.
  6. Assemble the Second Layer: Top with the second watermelon round and repeat the whipped cream and blueberry layering, piping another star border around the edge.
  7. Assemble the Final Layer: Place the last watermelon round on top. Repeat the whipped cream and blueberry layering. Cover the top entirely with whipped cream if desired and pipe stars around the top edge.
  8. Decorate the Cake: Garnish the cake with watermelon balls, assorted fresh berries, mint sprigs, and edible flowers if using.
  9. Chill and Serve: Refrigerate the assembled cake until ready to serve. This allows flavors to meld and the whipped cream to firm up.

Notes

  • Make sure to pat the watermelon slices dry well to avoid a soggy cake.
  • Use a sharp paring knife to finish cutting through watermelon if the ring doesn’t go all the way through thick slices.
  • For a dairy-free option, use coconut-based or other non-dairy whipping cream alternatives.
  • Assemble the cake close to serving time to maintain freshness and prevent the whipped cream from weeping.
  • To create edible flowers, ensure they are safe for consumption and pesticide-free.
