A refreshing and aromatic twist on the classic mojito, this Lavender Lemonade Mojito combines fresh lemon juice, mint, light rum, and a homemade lavender simple syrup to create a perfectly balanced, floral citrus cocktail. Ideal for warm weather gatherings, this drink features a delicate lavender flavor that complements the bright lemon and cooling mint.

Ingredients

For the Mojito

  • 1 cup freshly squeezed lemon juice (from 4-7 lemons)
  • 1 small bunch fresh mint leaves
  • 2 cups water
  • 1 cup light rum
  • 3/4 cup chilled lavender simple syrup
  • Ice, for serving

For the Lavender Simple Syrup

  • 1 cup granulated sugar
  • 1 cup water
  • 1/4 cup dried lavender buds

Instructions

  1. Muddle Mint and Lemon Juice: In a large pitcher, muddle the fresh mint leaves with the freshly squeezed lemon juice until well combined and the mint releases its aroma to infuse the liquid.
  2. Add Liquids: Pour in the 2 cups of water, 1 cup of light rum, and 3/4 cup of chilled lavender simple syrup into the pitcher. Stir thoroughly to combine all ingredients evenly.
  3. Serve Over Ice: Fill glasses with ice and pour the prepared mojito mixture over the ice, ensuring each glass gets a good balance of mint and liquid.
  4. Prepare Lavender Simple Syrup: In a medium saucepan, combine 1 cup granulated sugar, 1 cup water, and 1/4 cup dried lavender buds. Stir to dissolve sugar and bring the mixture to a boil over medium-high heat.
  5. Simmer Syrup: Once boiling, reduce heat to a simmer and let it gently cook for about 10 minutes until the syrup slightly thickens, allowing lavender to infuse.
  6. Steep Lavender Flavor: Turn off the heat, cover the saucepan, and let the syrup steep with the lavender buds for about one hour to deepen the floral notes.
  7. Strain and Store Syrup: After steeping, strain the syrup through a fine mesh sieve to remove all lavender buds. Transfer the syrup into an airtight container and refrigerate until fully chilled before using.

Notes

  • Adjust the amount of lavender simple syrup to taste, adding more for a stronger floral flavor.
  • Use fresh mint for the best aroma and flavor in the mojito.
  • For a non-alcoholic version, omit the rum and increase water or use sparkling water.
  • Ensure the lavender used is culinary grade and safe for consumption.
  • Store leftover lavender simple syrup in the refrigerator for up to two weeks.
