This Juicy Grilled Marinated Flank Steak recipe features tender flank steak soaked in a flavorful marinade of olive oil, tamari, garlic, balsamic vinegar, brown sugar, and black pepper. Marinated overnight and grilled to perfection, this steak delivers a deliciously smoky and juicy flavor, perfect for a quick and satisfying meal.

Ingredients

Steak and Marinade

  • 1 3/4 to 2 pounds flank steak
  • 1/3 cup olive oil
  • 2 tablespoons tamari (or soy sauce)
  • 4 cloves garlic, minced
  • 1/4 cup balsamic vinegar
  • 2 tablespoons brown sugar
  • 1 teaspoon black pepper

Instructions

  1. Prepare the marinade and marinate the steak: In a plastic Ziploc bag, combine olive oil, tamari, minced garlic, balsamic vinegar, brown sugar, and black pepper. Squeeze the bag gently to mix and help dissolve the brown sugar. Add the flank steak to the bag, seal it securely, and massage the marinade into the meat thoroughly. Place the bag in the refrigerator overnight to let the flavors deeply penetrate the steak.
  2. Preheat the grill: When ready to cook, preheat one side of your grill to medium-high heat. Allow it to heat up for about 15 to 20 minutes for direct heat grilling, ensuring the grill grates are hot enough to sear the steak properly.
  3. Grill the steak: Remove the marinated steak from the refrigerator and use tongs to place it on the hot grill. Cook the steak for 4 minutes on the first side without moving it to get a good sear and grill marks.
  4. Flip and continue cooking: Flip the steak over and grill for another 4 minutes. Use a meat thermometer to check the internal temperature; for medium-rare, aim for 130°F, and for medium, 135°F.
  5. Rest the steak: Once the desired temperature is reached, remove the steak from the grill and cover it loosely with foil. Let the steak rest for 15 minutes to allow juices to redistribute, resulting in a juicy and flavorful bite.
  6. Slice and serve: After resting, slice the steak thinly against the grain for maximum tenderness and serve immediately to enjoy the full depth of flavor and juicy texture.

Notes

  • Marinating overnight enhances the flavor and tenderness but if short on time, marinate for at least 2 hours.
  • Use a meat thermometer to perfectly gauge doneness and avoid overcooking.
  • Slice against the grain to ensure the steak remains tender.
  • If you don’t have tamari, substitute with regular soy sauce.
  • Resting the steak is crucial to retain its juices and improve texture.
