This Instant Pot Chicken Drumsticks recipe delivers tender, fall-off-the-bone chicken packed with flavorful seasoning and enriched with a savory homemade gravy. Using the Instant Pot allows for quick cooking while locking in moisture and taste, making it a perfect weeknight dinner that requires minimal hands-on time.

Ingredients

Seasoning

  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1 ½ teaspoons salt
  • ¾ teaspoon ground black pepper

Chicken

  • 2 ½ pounds (1.2kg) chicken drumsticks (about 10 pieces)
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 cup chicken stock or water
  • 1 tablespoon cornstarch (for gravy, optional)
  • 1 tablespoon water (for cornstarch slurry)
  • Chopped parsley leaves for garnish

Instructions

  1. Prepare Dry Rub: In a small bowl, combine the paprika, dried oregano, garlic powder, salt, and ground black pepper to create a flavorful seasoning mix.
  2. Season Chicken: Thoroughly season the chicken drumsticks on all sides with the dry rub to ensure even flavor throughout.
  3. Sauté Chicken: Select the SAUTE function on your Instant Pot, add olive oil and butter, and melt the butter completely. Add the chicken drumsticks skin side down and brown for 2-3 minutes. Flip and brown the other side for 2 minutes. Remove browned chicken and set aside. Brown in 2 batches if necessary to avoid overcrowding.
  4. Deglaze Pot: Pour the chicken stock or water into the Instant Pot, scrapping the bottom with a wooden spoon to remove any browned bits, which adds great depth to the sauce.
  5. Arrange Chicken: Place the trivet inside the pot. Arrange the browned chicken drumsticks on the trivet; overlapping is acceptable.
  6. Pressure Cook: Lock the lid securely and set the vent to SEALING. Use the PRESSURE COOK/MANUAL setting and cook at high pressure for 10 minutes. The Instant Pot will take around 6-7 minutes to reach pressure and start cooking. After cooking, allow a natural pressure release for fall-off-the-bone tenderness or perform a quick release if preferred.
  7. Make Gravy (Optional): Transfer the cooked drumsticks to a serving plate. Switch the Instant Pot back to SAUTE mode. Mix 1 tablespoon cornstarch with 1 tablespoon water to create a slurry, then whisk it into the cooking liquid until the sauce thickens to your liking. Taste and adjust salt if necessary.
  8. Serve: Pour the thickened sauce over the chicken drumsticks, garnish with chopped parsley, and serve immediately for a comforting and delicious meal.

Notes

  • For extra crispy skin, after pressure cooking, you can finish the drumsticks under a broiler for 2-3 minutes.
  • Chicken stock will provide more flavor than water for the cooking liquid.
  • Be sure to brown the chicken in batches without crowding to get a nice golden crust.
  • You can substitute dried oregano with Italian seasoning for a different flavor profile.
  • The natural release of pressure helps keep the chicken moist and tender.
