This vibrant and healthy Hummus Veggie Wrap is a quick and easy meal perfect for lunch or a light dinner. Packed with fresh vegetables, creamy hummus, and a touch of spicy sriracha, this wrap combines delightful textures and bold flavors wrapped in soft flour tortillas.

Ingredients

Wrap and Spread

  • 4 large flour tortilla wraps
  • 1 cup hummus

Vegetables

  • ½ large cucumber, sliced
  • 2 small roma tomatoes, sliced
  • 1 avocado, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 small carrot, julienned
  • 1 cup mixed salad greens

Optional

  • 4 teaspoons hot sauce or sriracha

Instructions

  1. Warm up tortillas: Warm the flour tortilla wraps by heating them in a microwave for about 10 seconds or using a skillet over medium heat briefly until soft and pliable. This makes them easier to fold without cracking.
  2. Spread the hummus: Evenly spread about 4 tablespoons of creamy hummus over the surface of each warmed tortilla. This serves as a flavorful base and helps keep the filling together.
  3. Layer the vegetables: Arrange the sliced cucumber, roma tomatoes, avocado, yellow bell pepper, and julienned carrot evenly on top of the hummus layer in each wrap to ensure every bite has a variety of fresh flavors.
  4. Top with salad leaves: Add a generous handful of mixed salad greens on top of the layered vegetables for added crunch and freshness.
  5. Drizzle with sriracha: Sprinkle about 1 teaspoon of hot sauce or sriracha over the salad greens for a spicy kick. This step is optional and can be adjusted to taste.
  6. Fold and roll the wrap: Fold the sides of the tortilla inward over the fillings to enclose them. Then fold the bottom edge up over the fillings and sides, rolling the wrap away from you tightly while keeping the sides tucked in. Press gently on the seam to seal the wrap and prevent it from opening.
  7. Slice and serve: Cut the wrap in half diagonally for easy handling and serve immediately. Optionally, serve with extra hot sauce or hummus on the side for dipping.

Notes

  • For a gluten-free option, substitute with gluten-free tortilla wraps.
  • Try adding different vegetables like shredded cabbage or sprouts for variety.
  • To make it vegan, ensure the hummus used does not contain dairy.
  • Wraps can be prepped ahead, but assemble vegetables last to avoid sogginess.
  • Adjust the amount of hot sauce based on your spice preference.
