Ingredients

Salmon and Marinade

  • 4 salmon filets (4-6 ounces each)
  • 3 tablespoons low sodium soy sauce or tamari
  • 2 tablespoons honey
  • 2 tablespoons sriracha
  • 2 teaspoons minced garlic
  • 3 tablespoons water

Bowls and Toppings

  • 2 cups cooked white rice
  • 1 avocado, sliced
  • 1 cucumber, sliced
  • 1 cup cooked edamame
  • 1/2 cup sriracha mayo
  • Red pepper flakes (for garnish)
  • Sesame seeds (for garnish)

Instructions

  1. Cut Salmon: Cut your salmon into 1-inch cubes. You can remove the skin if you prefer, or leave it on according to your taste.
  2. Whisk Marinade: In a large bowl, whisk together the soy sauce or tamari, honey, sriracha, minced garlic, and water until well combined.
  3. Marinate Salmon: Add the cubed salmon into the marinade and toss to coat evenly. Let it marinate for at least 20 minutes, ideally up to 1 hour, to absorb all the flavors.
  4. Heat Pan: Heat a large skillet over medium-high heat and add a splash of oil to prevent sticking.
  5. Cook Salmon: Place the marinated salmon cubes in the skillet and cook for 2-3 minutes on each side, allowing them to get a nice, crispy exterior.
  6. Add Sauce: Pour the remaining marinade into the skillet with the salmon and cook until the sauce thickens and glazes the salmon pieces, about 2-3 minutes.
  7. Assemble Bowls: Start with a bed of cooked white rice in each bowl. Top with the cooked honey sriracha salmon, slices of avocado, cucumber, and cooked edamame. Drizzle with sriracha mayo.
  8. Serve: Garnish with red pepper flakes and sesame seeds for extra flavor and crunch. Serve immediately and enjoy!

Notes

  • Marinating the salmon for longer intensifies the flavor, but 20 minutes is enough for a quick meal.
  • If you prefer less spice, reduce the amount of sriracha or use a milder hot sauce.
  • Sriracha mayo can be homemade by mixing mayonnaise with sriracha to taste.
  • Use brown rice or cauliflower rice as a healthier alternative if desired.
  • Ensure the skillet is hot before adding the salmon for the best sear and texture.
