This homemade hot cocoa mix combines rich unsweetened chocolate, sugar, and cream to create a luxurious, creamy base that can be stored in the fridge and quickly transformed into decadent hot cocoa with the addition of warm milk. Perfect for chilly days, this recipe yields a smooth, velvety drink that can be customized with marshmallows or chocolate shavings for extra indulgence.

Ingredients

Chocolate Base

  • 2 and 1/2 ounces (70 grams) unsweetened chocolate (such as Baker's)
  • 1/2 cup water
  • 2/3 cup (135 grams) granulated sugar
  • 1/2 teaspoon table salt

Cream

  • 1 cup (235 ml) heavy cream

To Serve

  • Hot milk (amount as desired per serving)
  • Optional toppings: marshmallows or chocolate shavings

Instructions

  1. Melt Chocolate: In a small saucepan over low heat, combine the unsweetened chocolate and water. Stir frequently until the chocolate has completely melted and the mixture is smooth.
  2. Add Sugar and Salt: Stir in the granulated sugar and table salt until fully incorporated into the chocolate mixture.
  3. Boil and Simmer: Increase the heat to medium-high and bring the mixture to a boil. Once boiling, reduce heat to medium and let it simmer for 4 minutes to blend the flavors.
  4. Cool Mixture: Remove the saucepan from heat and set aside, allowing the chocolate mixture to cool to room temperature.
  5. Whip Cream: While the chocolate mixture cools, use an electric mixer to whip the heavy cream until soft peaks form.
  6. Combine Cream and Chocolate Base: Gently fold the whipped cream into the cooled chocolate mixture until the mixture is uniform with no streaks remaining. This creates the creamy hot cocoa base.
  7. Store Cocoa Base: Transfer the cream-infused chocolate base into an airtight container and refrigerate until ready to use.
  8. Serve Hot Cocoa: When ready to enjoy, scoop 2-3 heaping tablespoons of the cocoa base into a mug. Warm your desired amount of milk either on the stovetop or in the microwave, pour it over the cocoa base, and stir until combined.
  9. Add Toppings: Optionally, top your hot cocoa with marshmallows or chocolate shavings to enhance the flavor and presentation.

Notes

  • The cocoa base can be stored in the refrigerator for up to one week.
  • Use whole milk for creamier hot cocoa or substitute with plant-based milk for a dairy-free option, though the texture will differ.
  • For a richer chocolate flavor, garnish with extra chocolate shavings.
  • Adjust the amount of cocoa base used per serving to control the intensity and sweetness of the hot cocoa.
