Ingredients

Main Ingredients

  • 1 Tablespoon olive oil
  • 3 garlic cloves, minced
  • 1 cup chopped yellow onion (1/2 of a large onion)
  • 1 Tablespoon Italian seasoning
  • 3/4 teaspoon salt
  • 3/4 teaspoon dried thyme
  • 1/4 teaspoon fresh ground black pepper
  • 8 cups beef, chicken, or vegetable broth
  • 3-4 cups frozen, canned, or fresh vegetables
  • 1 medium potato, peeled & chopped (1 heaping cup)
  • 1 bay leaf
  • 1 (6 ounce) can tomato paste
  • 1 (14 ounce) can diced tomatoes (do not drain)
  • 1 cup dry alphabet pasta

Instructions

  1. Prepare the base: Heat the olive oil over medium heat in a 5-quart or larger pot or Dutch oven. Add the minced garlic, chopped onion, Italian seasoning, salt, dried thyme, and black pepper. Stir occasionally and cook for about 5 minutes until the onion softens and the mixture is fragrant.
  2. Add liquids and vegetables: Pour in the broth and add the choice of frozen, canned, or fresh vegetables, along with the peeled and chopped potato and the bay leaf. Stir in the tomato paste and diced tomatoes with their juices. Bring the mixture to a boil over medium-high heat.
  3. Add pasta and simmer: Once boiling, add the uncooked alphabet pasta to the pot. Cover and reduce the heat to low to simmer gently for 30 minutes, allowing flavors to meld and pasta to cook through. After simmering, remove and discard the bay leaf from the soup.
  4. Serve: Ladle the soup into bowls and serve warm. Optionally, top each serving with freshly grated parmesan cheese for extra flavor.
  5. Store and reheat: Cover and refrigerate leftovers for up to one week. To reheat, pour the soup into a pot and warm it over medium heat until hot. Add additional broth if the soup has thickened too much due to absorption by potatoes and pasta.

Notes

  • Italian seasoning typically contains parsley, oregano, basil, thyme, and rosemary; feel free to use your favorite blend.
  • You can customize the vegetable mix by using what’s in season or available in your pantry and freezer.
  • For a vegetarian or vegan version, use vegetable broth and omit parmesan cheese.
  • This soup can thicken in the refrigerator; add additional broth or water when reheating to reach desired consistency.
  • Make sure to not overcook the pasta to avoid it becoming mushy.
