Ingredients

Main Ingredients

  • 1 pound ground beef
  • 1 yellow onion, diced
  • 1 (4-ounce) can green chilies
  • 2 cups chicken stock
  • 1 (28-ounce) can diced tomatoes
  • 2 tablespoons taco seasoning, store-bought or homemade
  • 2 (14-ounce) cans black beans, drained
  • 1 cup frozen corn
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced

Toppings

  • Shredded cheddar cheese
  • Sour cream
  • Fresh cilantro
  • Sliced green onions
  • Diced avocado

Instructions

  1. Brown the beef and onion: Place the ground beef and diced yellow onion in a large soup pot over medium-high heat. Cook, breaking up the meat with a spoon, until the meat is fully browned and onions are softened, about 8 minutes.
  2. Add green chilies and taco seasoning: Stir in the can of green chilies and the taco seasoning to coat the meat and onion mixture evenly, allowing the spices to release their aroma for about 1-2 minutes.
  3. Add liquids and tomatoes: Pour in the chicken stock and diced tomatoes (including their juices). Stir well to combine all ingredients evenly.
  4. Add beans, corn, and bell peppers: Add the drained black beans, frozen corn, and diced green and red bell peppers to the pot, stirring gently to mix everything together.
  5. Simmer the soup: Bring the mixture to a boil, then reduce heat to low and let it simmer uncovered for 20-25 minutes. This allows the flavors to meld and the vegetables to cook through tenderly.
  6. Serve with toppings: Ladle the hot soup into bowls and garnish with shredded cheddar cheese, sour cream, fresh cilantro, sliced green onions, and diced avocado as desired for added creaminess and freshness.

Notes

  • You can substitute ground turkey or chicken for a leaner option.
  • For a vegetarian version, omit the meat and use vegetable broth instead of chicken stock.
  • Taco seasoning can be homemade by mixing chili powder, cumin, paprika, garlic powder, onion powder, oregano, salt, and pepper.
  • Adjust the heat by adding jalapeños or hot sauce if you prefer spicier soup.
  • Leftovers can be refrigerated for up to 3 days and reheat well on the stovetop or microwave.
