Ingredients

Wet Ingredients

  • 3 large eggs
  • 1 cup mashed overripe bananas (about 2 large bananas)
  • ¼ cup real maple syrup
  • 2 tsp pure vanilla extract

Dry Ingredients

  • 1 cup almond flour (spooned & leveled)
  • 1 cup homemade oat flour (spooned & leveled)
  • 1 tsp ground cinnamon
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt

Add-Ins

  • 1 cup blueberries (fresh or frozen)

Instructions

  1. Prep the pan and oven: Preheat your oven to 350°F (175°C) and line a bread tin with parchment paper or grease it well to prevent sticking.
  2. Make homemade oat flour (optional): If making oat flour from scratch, place 1.5 cups of rolled oats into a blender and blend until finely ground into flour, which should take about 20 seconds to 1 minute. Measure out 1 cup for the recipe.
  3. Whisk the dry ingredients: In a small mixing bowl, combine the almond flour, homemade oat flour, ground cinnamon, baking powder, baking soda, and salt. Whisk together until evenly mixed, then set aside.
  4. Whisk the wet ingredients: In a larger bowl, thoroughly whisk together the eggs, mashed bananas, maple syrup, and vanilla extract until fully combined and smooth.
  5. Combine and fold in blueberries: Add the dry ingredient mixture to the wet ingredients and stir until just combined, being careful not to overmix. Gently fold in the blueberries using a spatula to distribute them evenly.
  6. Pour batter and bake: Pour the batter into the prepared bread tin, smoothing the top if needed. Place in the oven and bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cool completely: Remove the bread from the oven and let it cool fully in the pan. Cooling completely ensures a clean slice and a non-gummy crumb.

Notes

  • You can use fresh or frozen blueberries; if using frozen, toss them in a bit of oat or almond flour before folding to prevent sinking.
  • For homemade oat flour, ensure oats are blended finely to achieve the right texture in the bread.
  • Bananas should be very ripe for maximum sweetness and moisture.
  • Store leftover bread in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
  • This bread freezes well; wrap tightly and freeze up to 3 months.
